Betty's Summer Sauteed Zucchini Recipe
In this video, Betty demonstrates how to make Summer Sauteed Zucchini to accompany the family's evening meal. This dish consists of fresh zucchini, sliced and sautéed, and then tossed with a topping of Parmesan cheese, grated lemon rind, and salt and pepper. Delicious and colorful! Ingredients: 1 pound zucchini squash, washed and sliced into ¼-inch-thick slices 1 ½ teaspoons extra virgin olive oil 1 tablespoon shredded Parmesan cheese ¼ teaspoon grated lemon rind ¼ teaspoon salt ¼ teaspoon ground black pepper Saute 1 pound sliced zucchini in 1 ½ teaspoons olive oil in a large skillet over high heat, stirring constantly, about 5 minutes, or until crisp-tender. Remove from heat. Cover with a lid and let stand 5 minutes. In a small bowl, combine 1 tablespoon shredded Parmesan cheese, ¼ teaspoon grated lemon rind, ¼ teaspoon salt, and ¼ teaspoon ground black pepper. Spoon zucchini into a serving bowl, sprinkle with the cheese mixture, and toss gently. Serve immediately. This is a great summertime accompaniment to a meal, particularly if you have zucchini in your garden that need to be used! I hope you enjoy this recipe! --Betty

Betty's Battered Deep-Fried Zucchini Rounds Recipe
In this video, Betty demonstrates how to make a fantastic appetizer, her Battered Deep-Fried Sweet Zucchini Rounds. These are served with Betty's Surfin' Seafood Cocktail Sauce or ketchup. NOTE: IF YOU ARE NOT COMFORTABLE WORKING WITH HOT OIL, PLEASE DO NOT TRY THIS RECIPE. Ingredients: 1 cup self-rising flour 1 egg, well beaten 1 cup milk 1/4 cup vegetable oil large zucchini, washed, and cut into rounds 2 inches of cooking oil in a deep fryer or pot on the stove (I used peanut oil.) In a large mixing bowl, combine 1 cup self-rising flour, 1 well-beaten egg, 1 cup milk, and 1/4 cup vegetable oil. Stir completely, or blend with an electric mixer. Have your zucchini rounds prepared for cooking. Heat 2 inches of oil in an electric deep fryer or a pot on the stove to somewhere between 345 degrees and 375 degrees. With tongs, dip pepper pieces in batter, allowing excess batter to drip into bowl, and then transfer to hot oil. You may fry several rounds at the same time. Fry until golden brown on both sides, and then remove with tongs or other utensil and place on paper toweling to drain. When all pieces are fried and removed, pat the upper side to remove any further excess oil. Now, place the Battered Deep-Fried Zucchini Rounds on a nice serving dish, and serve with Surfin' Seafood Cocktail Sauce or ketchup. Terrific!!!

In this video, Betty demonstrates how to make Baked Zucchini Chips. This is a recipe that was sent in by Michelle Hopkins, a great viewer and friend of bettyskitchen from Alabama. Michelle goes by the user ID "poenut" on YouTube, in case you want to drop by her channel and comment on her terrific appetizer. These zucchini chips are crunchy and delicious—and healthy (baked, not fried)! They are great to serve as a snack for guests over the coming Easter holiday. Thanks, Michelle! Ingredients: 2 zucchinis, unpeeled, or mostly unpeeled, and cut into ¼-inch slices 1 cup all-purpose flour 1 teaspoon salt ½ teaspoon ground black pepper 2 eggs (I started with 1 egg, but needed more.) 2 tablespoons milk (I started with 1 tablespoon milk, but needed more.) 1 small can French fried onions, crushed panko bread crumbs (Use an amount equal to the crushed French fried onions.) cooking oil spray Cut 2 unpeeled zucchinis into ¼-inch slices. Set aside. Place 1 cup of all-purpose flour into a Ziploc bag. Add 1 teaspoon salt and ½ teaspoon black pepper. Close the bag and shake, until the flour is seasoned. Set aside. In a small bowl, whisk 2 eggs and add 2 tablespoons milk and set aside. (You may need to replenish this egg wash as you proceed.) In a Ziploc bag, crush together equal amounts of canned French fried onions and panko bread crumbs, and then place the mixture into a shallow dish and set aside. Spray a wire cooling rack with cooking oil spray and place it on top of a shallow baking ...
Homestead Series How To Can Zucchini Relish
Zucchini Relish 10 cups chopped zucchini 1/2 cup coarse salt 5 cup chopped onions 1 cup diced celery 2 med red bell peppers diced 2 tsp turmeric 1tbs dry mustered 3 med green peppers diced 6 cups sugar 5 cups white vinegar 3 tbs corn starch Prepare veggies. Combine with 1/2 cup salt in a large pan. Let stand overnight. Next day drain and rinse thoroughly and drain again in a colander. Press a bowl down on top of veggie mix to force out as much liquid as possible. In a large pot, boil remaining ingredients. Add veggies and bring to a rolling boil. Reduce heat and boil gently for 20 min. Ladle into hot sterilized jars and process in a water bath canner for 20 min. Makes 8 pints.

In this video, Betty demonstrates how to make a delightful Southwestern side dish—Sauteed Zucchini with Corn and Green Chilies. If you are a fan of Tex-Mex food, you will love this recipe! Ingredients: 2 medium-sized, fresh zucchini squash, diced 1 medium-sized onion, sliced into rings 2 tablespoons extra virgin olive oil 11 oz. can corn (This can be whole kernel corn, Mexicorn, or Southwestern corn. I used Southwestern corn.) 2 tablespoons drained, diced green chiles (Add green chiles to taste. I used ¼ cup, and that is quite hot!) 1 teaspoon garlic salt ½ teaspoon salt ½ cup shredded sharp Cheddar cheese (optional) Place 2 tablespoons of olive oil in a medium-sized saucepan. Add 2 zucchini squash (diced) and 1 onion (sliced in rings), and saute until slightly tender. Add 11 oz. can of corn, 2 tablespoons diced green chiles, 1 teaspoon garlic salt, and ½ teaspoon salt. Simmer, stirring occasionally, until flavors are blended—about 10 minutes, or to your taste. You may add ½ cup shredded Cheddar cheese and stir to melt, or serve the shredded cheese, sprinkled on top of each individual serving. I hope you enjoy these calabacitas con chile verde!

I know what you're thinking, I can get zucchini year round, and that's true, but Peak season for zucchini is May through July when they will be at the tastiest and most nutritious. And remember that when you buy foods in season, and local, you save money! You wouldn't know it but zucchini is a great food to add to your diet for bone health. It contains many of the nutrients your bones need, such as magnesium and phosphorous, manganese and copper. These nutrients strengthen the bones and support bone metabolism. It's also a great food to add if you are watching your weight. One cup is only 36 calories. Eat it raw. Cut your zucchini into sticks and use for dipping hummus. You can grate it like you would a carrot and toss in salads. They have high water content. Lightly sauté chunks of zucchini in vegetable broth, for no more than 5 minutes to preserve the nutrients, then sprinkle with Italian seasoning and serve as a side dish. You can make it more interesting by sautéing it along with onions and mushrooms. Zucchini is great on kabobs and wonderful in scrambled eggs. Just chop it up in smaller pieces. Add smaller chunks of zucchini to spaghetti sauces for extra crunch.

Ingredients: 2 small to medium fresh zucchini squash, washed, dried, and cut into ½-inch slices 2 small to medium fresh yellow summer squash, washed, dried, and cut into ½-inch slices salt and pepper, to taste 1 tablespoon butter or margarine, melted 1 teaspoon sugar In a medium-sized skillet, melt 1 tablespoon butter or margarine. Add zucchini and yellow summer squash slices. Sprinkle with salt and pepper to taste. Sprinkle with 1 teaspoon sugar. Saute over low heat, until squash is translucent, but not mushy, about 7 or 8 minutes. Remove from pan to a tray covered with paper toweling to absorb any excess butter or margarine. Serve in a clear bowl to show off the contrasting green and yellow colors of the squash. This is a beautiful side dish that is healthy and super easy to make! And, it is subtly sweet and tasty!!!

Betty's Pasta with Tomato and Zucchini Sauce
In this video, Betty demonstrates how to make Pasta with Tomato and Zucchini Sauce. I used penne pasta and topped it with a wonderful tomato sauce made with zucchini and other vegetables. Ingredients: 8-oz. uncooked pasta (I used penne pasta, but you may use the pasta of your choice.) 1 teaspoon salt 2 teaspoons extra virgin olive oil 2 additional teaspoons extra virgin olive oil 1 medium to large zucchini, cut into ¼-inch slices 1 medium onion, chopped 2 medium cloves of garlic, minced (2) 14.5-oz. cans Italian-style stewed tomatoes, undrained (I used stewed tomatoes flavored with basil, garlic, and oregano.) ¼ teaspoon salt ¼ teaspoon freshly ground black pepper ½ cup chopped fresh basil ¼ cup Parmesan cheese, finely grated In a large pot, bring at least 2 inches of water to a boil over medium heat. Add 1 teaspoon salt. When the water is boiling, add 8-oz. uncooked penne pasta, and cook, according to package instructions. Drain. Add 2 teaspoons olive oil and mix well. Cover with aluminum foil and set aside. Meanwhile, heat 2 tablespoons of olive oil in a large, deep skillet over medium heat. Add 1 sliced zucchini, 1 chopped onion, and 1 minced clove of garlic. Saute about 4 minutes, until onion is clear. Spoon sautéed vegetables into a large bowl and cover with aluminum foil. Set aside. To complete this How-To you will need: A grill A steel brush A clean cloth Vegetable oil Zucchini Squash A vegetable peeler A pastry brush A fork A grill basket (optional) Metal skewers (optional) Step 1: Clean the grill Clean the grill. For a charcoal grill, light some coals; with a gas grill, set it on high and close the lid. After about 20 minutes, let the grill cool. Then scrape off the burnt-on bits with a steel brush, and end by wiping down the grill with a clean cloth soaked in vegetable oil. Step 2: Heat the grill Heat a gas or electric grill to medium. If it's a charcoal grill, wait until the coals are ash-colored. Step 3: Prep the veggies Rinse the zucchini and squash, peel them, cut them in half lengthwise, and remove the seeds.
