Apr 18, 2012 - These are fine recipes, but I wouldn't cook with extra virgin olive oil and probably wouldn't use any refined or semi-refined olive oils. High-oleic saffron and sunflower (or canola?), coconut and avocado oils, fe, have high smoke points. WHFoods. com specifies these and some others, and the editor leans on the side of being very cautious, while also relying very much on scientific research.Zuchini spaghetti can be sautéed in broth, rather than cooked in oil, too.

May 10, 2012 - The sauce is Colavita Garden Vegetable Sauce. You can find it in some supermarkets, or easy to order on-line at Colavita.com. Ah, mean people...such is life ~Cheers...

May 11, 2012 - I was very gentle, but you are right...metal on non-stick is not recommended...rest assured, I have changed to stainless pots and sauté pans. The non-stick ones all go bad, eventually anyway... ~ thanks for watching and Cheers!

May 21, 2012 - Try sauteeing vegetables in water instead of oil. That will lower the fat content in your dishes.

May 21, 2012 - It is Calalphon non-stick although I have moved to their stainless collection as I don't care how much you pay for non-stick it seems the non-stick comes unstuck and I don't like the little flakes in my food. Thank you for your comments and the stove is an Electrolux gas range, just FYI. Cheers - Lindy

May 21, 2012 - Popularly known as squash, but I suppose if you want to split hairs...The zucchini or courgette is a summer squash which often grows to nearly a meter in length, but which is usually harvested at half that size or less. It is a hybrid of the cucumber.

Apr 18, 2012 - Olive oil and other cooking oils only become carcinogenic when they are BURNED, which is when the oil reaches to high of a temp and begins to smoke. Also, cooking the zucchini will kill some of the enzymes and nutrients, but eating it cooked is still very healthy, especially compared to eating regular pasta. So please, before you speak as if you are some kind of authority on oils and before you criticize people for cooking their vegetables, think about how idiotic you sound. Thanks.
