Apr 17, 2012 - such fatty meat, you should remove it, i do, yet asians don't tend to get all the unfortunate outcomes of eating such fatty meat - unlike western countries.

Apr 24, 2012 - Made Katsu today the same way chef makes it and it was crispy and juicy. I even made a simple sauce from Hot & Sour soup by adding a little cornstarch, and it tasted delicious. Love cookingwithdog videos and hope chef is doing better.

Apr 26, 2012 - Mirin is a sweetened sake or rice wine with a light syrupy texture, used in Japanese cooking. If you can't find mirin, use sherry as an alternative. For Dashi, maybe use fish stock or a little anchovie paste although it's not quite the same. Check out this website and you'll see why lafujimama. com and serch for how to make dashiHope this helps!

May 2, 2012 - Ha! What they call tonkatsu in Japan they call pork cutlet in England, pork tenderloin in the United States, and jaegerschnitzel in Germany. I've made it so many times I hardly knew there was a real recipe out there! Who knew? No matter what the comments, say keep the fat on the pork. It is essential to making the cooked cutlet nice and juicy. Health nuts can cut the fat off afterwords if they like.
