Sep 17, 2011 - Agreed. I had lost faith in cooking shows until I saw him late at night one time when I turned on PBS. I watched one show and afterward said to myself "NOW THAT MAN IS A CHEF"!! If you think about it, lots of chefs these days that are in fine dining undermine "banquet cooking". However, their "works of art" on the plate came from the idea of banquet cooking (eggs that look like men with hats). It's so hypocritical it's not even funny. This is more classic cooking, not nouvelle.
