Two of the most reputable recipes out there (one from an American chef and one from a noodle-pulling teacher) are COMPLETELY different. One calls for the lowest possible gluten level of flour and the other for the highest. I've tried both and neither works. Void is right on - the dough makes all the difference. This video is noodle-pulling, but it is not making noodles from "scratch". It's mistitled

There are many differences of opinion on how to make dough, and the experts aren't giving it up. Some say high gluten flour, some say cake flour. Some say use lye water, others say don't. People "like" the video because it's fun to watch, not because they know how to make dough. Why don't you make a video if you know how it's done? We'd be so grateful.
