I was apparently gluten-sensitive and didn't even know it (I didn't have celiac disease or anything). That stuff messes with one's brain. Check various medical studies if you'd like, or just jump to something like Paleo diet websites for gluten-free recipes. Best of luck, and I know how you feel...
