Kyocera gave me a DVD of the How Did It They Do It episode they were featured in. DV Post produced the video about how knives are re-sharpened in southern California.

Dec 12, 2010 - This is factually inaccurate. Even though ceramic knives have a much greater hardness they are nowhere near as tough as metals. They will fracture (are more brittle) far easier than pretty much any metal alloy.search wikipedia for "fracture toughness" and you will see a table comparison of metals vs ceramic (kyocera knives are made from zirconium silicate ceramic)

May 31, 2011 - Cubic boron nitride is harder than TTZ ceramics, but CBN is too brittle. TTZ has the best fracture toughness of any ceramic which is why they use it. TTZ itself is hard enough that not to many things can dull it by abrasion which is the usually the cause of bluntness with steel kitchen knives. The likely source of a blunt edge on a ceramic knife is chipping.

Aug 20, 2011 - The people for who this is intended are not going to bend, drop or hack with it any more than they would with a conventional knife. Ceramic knifes have their limitations but so does any fine tool. They a meant for a specific purpose. Besides all that, they are far stronger than some would make them out to be. They don't just break out of the blue.

Oct 2, 2011 - Diamonds are the hardest material in the world, yet you can smash it with a hammer. Go figure... Just because it's hard doesn't mean it's not brittle. Hard does not equal tough. Even so, you can drop them without them breaking. Search for it here on youtube. Also, it's "break", not "brake".
