I think he chose casters because Panda cannot breath of fire Spell Breakers, but he was not able to mass up a large enough army.

Sky hadn't enough lumber to build Gryphon aviary and more tower. Furethermore, if sky chose Gryphons, Lyn would had much time for build expo and well prepared for Gryphons. That's why Sky built Arcane Sanctums and chose Archmage to push earlier.
