In the Kitchen with Ken - Venison Steaks with Shiitake Mushroom Sauce

Venison steaks 2 pounds venison steaks 1 quart buttermilk 1 tablespoon sea salt 1 tablespoon ground pepper In a 9x13 glass pan, cover steaks with buttermilk. Add salt and pepper and soak overnight. The buttermilk will help pull out some of the blood from the meat and calm the venison's game flavor. Remove steaks from buttermilk and discard liquid. Coat each steak with a little fresh ground pepper. Grill them on a high heat on the grill to a medium doneness. Sauce 5 pieces of bacon 4 garlic cloves, minced ½ stick of butter 1 sweet onion, chopped 2 cups shiitake mushrooms, chopped 1 red pepper, chopped 3 tablespoons Worcestershire sauce 1 tablespoon brown sugar ¼ tablespoon ginger 1 tablespoon flour ½ cup water Cook bacon in a large cast iron skillet and remove. Leave the bacon grease and add garlic, butter and onions. Cook until the onions are translucent. Add mushrooms, red pepper, Worcestershire sauce, brown sugar, ginger and flour. Saute several minutes to cook out flour, then add 1/2 cup water. Simmer until everything is well blended. Pour sauce over the venison to serve. Red potatoes 2 dozen small red potatoes 1 tablespoon salt 2 tablespoons Cajun seasoning (Tony Chachere's) 1 tablespoon hot sauce Bring 2 quarts of water to a boil. Add red potatoes, salt, Tony Chachere's and hot sauce. Boil until soft. Drain and serve. Lettuce wedge 1 head iceberg lettuce Salad dressing Cut head of lettuce into quarters. Drizzle dressing over top. Serve cold.

Venison Ravioli with Morel Sauce

If you've got some extra time to spare and you're looking for a recipe that's sure to be a hit... then why not try our made from scratch venison ravioli... topped with a wonderful morel mushroom sauce. This recipe is a little more challenging than normal... but the end result will be well worth the effort. To make the ravioli dough, you'll need a red pepper, flour, eggs and salt. Blend the pepper in a food processor until liquid. Set aside in a small bowl so the pulp will rise to the surface. Measure out 3 tablespoons of the pulp and set aside for the dough. Place the flour in a bowl, add salt, then eggs and the pulp. Mix together, form in a ball and set aside to rest. For the ravioli filling you'll need ground venison or beef, chopped parsley, and onion. Brown the meat in a skillet and add the parsley and onion. Season with salt and pepper and let cool. Roll out the dough very thin with a pasta machine or rolling pin. Then cut the dough in half. Place small balls of filling about 1 2 inches apart on one half of the dough. Brush the dough with water. Place the other half on top and seal the dough together. Then cut into squares with a pastry cutter and seal the edges. Next, we'll prepare the morel sauce. You'll need the remaining red pepper pulp, whole milk, butter and chopped morel mushrooms. Saute the mushrooms in butter until tender and set aside. Place milk and red pepper in a saucepan and bring to a boil. Whisk in the butter and add the mushrooms. Salt and pepper to ...



Venison Chimichangas recipe

One of the really wonderful things about venison is its versatility. You can substitute it for just about any meat...and turn an old favorite into something new, healthy and delicious. Today, we're doing just that: adding a little spice to your life, with venison chimichangas! Place one to two pounds of cubed venison in a stock pot, cover with water and bring to a boil until the venison is thoroughly cooked. Drain and shred the meat with a fork. Add your favorite home-made or commercial taco or fajita seasoning and water. Mix well and simmer 15 to 20 minutes. If you get too much liquid, you you will want to allow the excess to cook off. You want the meat to be moist but not juicy. Place shredded cheddar in a line down the middle of a taco-sized flour tortilla, then add some of the meat mixture. Fold the narrow ends of the wrap in first, then the longer sides...so the filling won't leak out. Secure the flaps with a toothpick. Deep fry the wrap, toothpick side down, until golden brown. Turn and brown the other side before removing the wrap to a paper-towel lined plate. To serve, place the chimichanga on a plate, surround it with lettuce and top with tomato, onions, sour cream, guacamole, salsa and shredded cheese. Drizzle taco or hot sauce over the entire plate. Try this south-of-the-border recipe on your friends who think venison tastes gamey...and I bet it will be love at first bite!

You feel like once you get the door working on the smoke chamber that you're almost done, but that's just the beginning. One correction in the video - the firebox is a 25 GALLON tank - or 100 pounds for LP. I mistakenly called it a 25 POUND tank a couple times. All welding was done with a 110 v Mig. Other tools included a chop saw, grinder, drill, drill press, etc. Pretty basic. I used Mapp gas in a torch to heat the rod and bend it.

Venison Tenderloin Recipe

1. for the marinade, pour about half liter of dry white wine into a plastic container. Pour 1/4 of a CUP of distilled vinegar into the plastic container (about 4 TABLEspoons) 2. Fill one of your hands with about two TABLEspoons of Olive oil, and rub it into the tenderloin evenly for about 45 seconds. 3. Salt your tenderloin with one TABLEspoon of salt on EACH side. rub it in nicely and evenly. 4. Half a TEAspoon of pepper on EACH side. rub it in nicely and evenly 5. Quarter of a TEAspoon of rosemary on EACH side, rub it on each side evenly 6. Pinch of thyme on EACH side, do not overdo it. 7. two pinches of brown or regular sugar on EACH side. 8. Mince a WHOLE garlic, and rub half of it on your tenderloin, and throw the rest into your wine marinade. 9. Cut about a HANDFULL of Italian parsley, but do not mince it, just take the stems off, and put half of it in to the contaier and place your tenderloin on top of the parsley. place the other half of the parsley on TOP of the tenderloin. 10. The tenderloin must marinade in this mixture for 24-48 hours. It is IMPORTANT that you turn the meat over every 4 Hours. 11. Grab a Roasting, or Dripping pan and pour about three TABLEspoons of Olive Oil on it, and set your oven to 350 and let it sit WITHOUT the meat. 12. While your pan is warming up, take a half stick of butter, or 1/4 of a cup. You must use real butter not that Country Crocker Crap. cut it into square pieces, you will need about 8. 13. You will need a hard Salami or hard ...

How to make Pork and Venison Red Hot Links

This is a video with a very simple recipe (included) on making my version of those hot sausage links (low fat of course) that you find in grocery stores. The recipe is a pork or pork/deer mix but can be made from pure deer if you modify it slightly by use of a binder like soy flour or pork/beef fat. If using all venison, add about 1TBS soy flour per 1-1/2 deer and about the same in water. You can also use a commercial fat replacement and do the same thing. The recipe is balanced to (my guess) to be hot but not too hot for the average person. Try it and adjust according to your taste. Regular non-iodized salt can be used in place of the Morton Tender Quick®. The end product requires refrigeration.
