Check out my other video for Yakisoba Japadog!! www.youtube.com So my friend wanted me to show him how to make yakisoba... I'm using udon noodles (because that's how I always make it) but feel free to use chukamen noodles. You can also use store bought yakisoba sauce. For this video I tried making my own and I think it tastes pretty similar to the Otafuku yakisoba brand. Lol I actually asked my mom how she makes her sauce... and she said "You don't make it, you buy it!" sigh... D; For the meat, use pork or whatever meat you want and add any veggies you like. This recipe makes a lot of sauce, I think enough for like 3 portions... or maybe 2. Just add enough sauce to flavour it, you don't need to dump the whole thing in the frying pan! For the sauce: 2 T soy sauce 2 ½ T Worchestershire sauce ½ T sugar ½ t mirin ½ T sake ½ t beef stock mix 2 T Bulldog "chuno" sauce (this mellows out the Worchester) ½ t hot chili oil This recipe brings back a lot of memories for me... because when I was little my mom would always make yakisoba for my lunches in elementary, and I loved it... until some boy asked me what I was eating. Me: "It's yakisoba..." Boy: "Ehh ? YUCKY soobaaa and why are your noodles rotten??" Me: "It's not... it's soy sauce" T_T I then proceeded to hide my rotten noodles in shame. Documentary Podcast of my trip to Japan in the Spring of 2008 Episode 3 Ingredients --- • 1 tsp salt • 2/3 cup of water • 2 1/2 cups wheat flour Equipment --- • 2ft x 2ft cutting board • Rolling pin or dowel • Small bowl of wheat flour • Long Knife or Cleaver • Container for noodles Directions --- Mix ingredients together with hands until doughy. Knead dough in a plastic bag (traditionally this is done with the feet). When the dough becomes rubbery, flatten with a wooden dowel or rolling pin until approximately 1/16 of an inch thick. Dust the flattened dough with flour and pleate to length of knife. Cut to desired thickness (1/6 of an inch recommended). Shake free excess flour, twist into bundles, and place in container. Handmade noodles are best eaten promptly. Boil noodles for approximately five minutes. Add desired seasonings. Suggested Seasonings --- • Fresh Ginger • Green Onions • Shitake Mushrooms • Katsuobushi (Dried Fish Flakes) • Basil and/or parsley • Nori • Chili Powder • Sake ^_^ いただきます (Let's Eat!)

After making sure you have clean hands, we can start kneading the dough. 4. Knead the dough for about 10 minutes until smooth. 5. Wrap a dough in a wet cloth and leave it for at least 10 min or up to a few hours. 6. Let's now make some Niboshi Dashi, which is a Japanese fish stock made of dried sardines. 7. Remove the guts from the dried sardines (40g=1.4oz.) Transfer all of the dried sardines into a small pot. 8.Pour approx. 2 cups = 500ml of water and soak them for at least one hour. 9.
