Tempura

A light batter is made of cold water (sometimes sparkling water is used to keep the batter light) and soft wheat flour (cake, pastry or all-purpose flour). Eggs, baking soda or baking powder, starch, oil, and/or spices may also be added. Tempura batter is traditionally mixed in small batches using chopsticks for only a few seconds, leaving lumps in the mixture that, along with the cold batter temperature, result in the unique fluffy and crisp tempura structure when cooked. The batter is often kept cold by adding ice, or by placing the bowl inside a larger bowl with ice in it. Overmixing the batter will result in activation of wheat gluten, which causes the flour mixture to become chewy and dough-like when fried. Specially formulated tempura flour is available in worldwide supermarkets. This is generally light (low-gluten) flour, and occasionally contains leaveners such as baking powder. Tempura generally does not use breadcrumbs (panko) in the coating. Generally, fried foods which are coated with breadcrumbs are considered to be furai, Japanese-invented Western-style deep fried foods, such as tonkatsu or ebi furai (fried prawn). Thin slices or strips of vegetables or seafood are dipped in the batter, then briefly deep-fried in hot oil. Vegetable oil or canola oil are most common; however, tempura was traditionally cooked using sesame oil. Many specialty shops still use sesame oil or tea seed oil, and it is thought certain compounds in these oils help to produce light ...

In this video we go to Yabu Japanese Restaurant on La Cienega Blvd. This shop is famous for its hand pulled buckwheat soba noodles. It's the only Japanese restaurant in Los Angeles where they make the Soba from scratch. In nearby Torrance there are a few other places though. We had a very Minxy time full of deliciousness. We ordered Tenzaru. which is Tenpura along with cold soba (called Zaru Soba in Japanese). When you order your food, don't confuse Tenzaru with Nihonzaru which means Japanese monkey, or you could end up with a very different kind of dish. We also visited the Hollywood walk of fame to see the stars of celebrities on the side walk. We didn't see any real movie stars, just there names written on the sidewalk. If you are interested in the Walk of Fame but can't travel to Los Angeles, you can make your own walk of fame at home. Just by some colorful chalk, draw some stars on the sidewalk, and write in the names of your favorite actors and musicians, and pets too. After the walk of fame, we went to Yougurt Land, which is a popular Korean style frozen yogurt place where you buy the yogurt by the ounce, or pound. Hannah had purple Taro potato flavor. Tempura Restaurant "Tenkin" in Hamamatsu, Shizuoka: 静岡県、浜松市、天錦天ぷら屋

There's an amazing tiny hole-in-the-wall tempura restaurant in Hamamatsu in a back alley somewhere near the downtown area, called Tenkin. It's only open for lunch from 11am-1:30pm and a line forms out the door shortly after the place opens. There's enough counter seating for about 10 people max and the food is delicious! The owner/chef is famous in the local area for dipping his fingers into the hot, boiling oil, which made me cringe, and the speed at which he works keeps you on the edge. No real menu, just a 1000 yen bowl of tendon and a cup of miso soup. (Price increases to 2000 yen at dinner time for more food.) We had egg yolk tempura, seaweed tempura and shrimp wrapped in seaweed tempura as special treats in our bowl, aside from the usual vegetables, fish, etc. You kind of feel pressured to eat fast, but I highly recommend this restaurant! Highly entertaining and a mom-and-pop-shop taste of traditional Japan that is hard to come by thesedays. ^^
