Actually the order was SOBA. But it's was not good enough to make video so I added tempura and mentsuyu recipe. Mentsuyu is very useful ingredients for Japanese food recipe. Old Japanese Soba Noodle Restaurant
This wonderful soba noodle restaurant is located in a very old farmhouse high in the mountains surrounding the Japan Southern Alps. Our family fled to the mountains on a hot and humid day in summer and enjoyed several hours dining and relaxing in this lovely old building. The family who own the restaurant make their own noodles fresh daily and grow their own wasabi root which customers prepare at the table (so good!). One of the things I love about old Japanese homes is the way that they can be opened in the warm months to allow fresh air to flow through the house. The wide roof eaves protect the inside from getting wet during heavy summer showers allowing occupants to rest (or even nap as in the case of one couple) while listening to the sound of the rain close at hand. The house was filled with charming artifacts from its previous life as a family home, including a splendid built-in butsudan Buddhist altar and large and well cared-for kamidana god shelf. The excitement near the end of the video is due to the rare sight (difficult to see through the rain and clouds) of a mountain waterfall which only appears during heavy rain.

[Soba] Dried or fresh buck wheat noodle Boiling water + pinch of salt for boiling Cold water to chill... [Stock for Soba] 2 cups of water 5-7 TBS of Soy sauce 2 TBS of Mirin 2 TBS of Sugar 5gm of Bonito powder stock [Tempura] suggestions Tiger Shrimp Okura Shiso leaves Shiitake Mushrooms Sweet Potatoes Other kind of Mushrooms etc.. [Tempura Butter] 1 cup of cold water and ice cubes 1 cup of flour 1 TBS of corn starch 1 egg Mix them all, but do not put all water..but check the texture! do this just before you deep fly your vegetables etc.. Deep flying oil -170 temperature.. Serve with grated ginger, sliced green onions and wasabi!! SORRY! It seems the best part of this episode of tasting the delicious tiger shrimp was apparently not recorded at all.. can not find the clip anywhere in my mac.. sorry! but please enjoy making some of tempura/soba or both of them at home :) cheers!

Soba is a type of thin Japanese noodle made from buckwheat flour. It is served either chilled with a dipping sauce, or in hot broth as a noodle soup. Moreover, it is common in Japan to refer to any thin noodle as soba in contrast to udon . It takes three months for buckwheat to be ready for harvest, so it can be harvested four times a year, mainly in spring, summer, and autumn. In Japan, soba noodles are served in a variety of settings: they are a popular inexpensive fast food at train stations throughout Japan, but are also served by exclusive and expensive specialty restaurants. Markets sell dried noodles and men-tsuyu, or instant noodle broth, to make home preparation easy.

Teriyaki Chicken with Soba Noodles - Healthy Japanese Food Ingredients: 1 pound soba noodles 2 large chicken breasts 1/2 cup teriyaki marinade (Soy Vay) 1/4 cup thick teriyaki sauce 2 tablespoons chicken base (or 1 - 1/2 cups chicken broth) 1 - 1/2 cups hot water 1/4 teaspoon sesame oil green onion and baby bok choy Preparation: 1. Marinate chicken in teriyaki marinade overnight 2. Grill chicken until done, cool and slice 3. Boil noodles for 8 minutes - remove and drizzle with sesame oil 4. Dissolve chicken base in hot water 5.
