To complete this How-To you will need: 2 c. short grain white rice, preferably Japanese sushi rice Lots of fresh, cold water A measuring cup A mesh strainer A heavy, 2-quart pot with a lid A wooden spoon A timer A 4-quart plastic, silicone, or glass bowl 1/2 c. white rice vinegar 2 tsp. salt 1/4 c. sugar A four-inch piece of konbu seaweed And a 1-quart saucepan Step 1: Rinse rice Place the rice in a mesh strainer and rinse it under cold running water. Pick out any debris you might find in the rice, such as weird little pebbles or odd-looking grains of rice. Step 2: Soak rice Place the rinsed rice in your 2-quart pot and fill the pot with water until it's about one inch above the rice. Let this soak for 30 minutes. Step 3: Rinse rice again Place the soaked rice back in the strainer and rinse it again under cold running water until the water runs clear. How to make Rice Pudding
Jack Scalfani shows you his family's secret recipe on how to make Rice Pudding. Rice Pudding Recipe 1 ½ cups long grain rice 4 cups water 6 cups milk 2 cups sugar 2 eggs 1 T vanilla 1/8 tsp salt 1/8 tsp cinnamon Boil rice in water till water is gone. Add milk and cook on low flame till thick. Beat eggs, vanilla, drop of milk and cinnamon. Add mixture to rice and cook till thoroughly blended. Put in bowl and sprinkle with cinnamon. Note: recipe can be cut in half or doubled.

Many people become extremely intimidated when it comes to making Persian rice. You have to trust me when I tell you it is really not a big deal (just dont tell anyone Persian I said that!). All you need to do is to imagine that instead of making rice, you are making pasta. Most of us know how to make pasta; it is probably what you ate everyday when you went to college! You are going to cook this rice in boiling water with oil and salt, just like pasta. You are going to wait until the rice is al dente (when you bite a grain of rice it should still have a white dot in the middle), just like pasta. Do not overcook Persian rice or your reputation as a Persian cook will suffer! And last, you are going to drain it, just like pasta. The only difference comes next: Persian rice has one cooking step that pasta doesnt have. Persian rice gets steamed. Think of it this way—since this rice is fancyit requires a spa treatment.
