Costa Rica Chito "The Crocodile Man and the famous Crocodile Poncho"
Rather than trying to tame wild stallions, fearless Costa Rican fisherman Chito prefers a playful wrestle in the water with his best pal Pocho - a deadly 17ft crocodile. The 52-year-old daredevil draws gasps of amazement from onlookers by wading chest-deep into the water, then whistling for his 980lb buddy - and giving him an affectionate hug. Crazy Chito says: "Poncho is my best friend. This is a very dangerous routine but we have a good relationship. He will look me in the eye and not attack me. It is too dangerous for anyone else to come in the water. It is only ever the two of us." Chito made friends with the croc after finding him with a gunshot wound on the banks of the Central American state's Parismina river 20 years ago. He had been shot in the left eye by a cattle farmer and was close to death. But Chito enlisted the help of several pals to load the massive reptile into his boat. He says: "When I found Poncho in the river he was dying, so I brought him into my house. He was very skinny, weighing only around 150lb I gave him chicken and fish and medicine for six months to help him recover. I stayed by Poncho's side while he was ill, sleeping next to him at night. I just wanted him to feel that somebody loved him, that not all humans are bad. It meant a lot of sacrifice. I had to be there every day. I love all animals - especially ones that have suffered." It took years before Chito felt that Poncho had bonded with him enough to get closer to the animal. He says ...

How To Cook Plantains Platanos -- Puerto Rican Style
www.MiriamBuhr.com Green Plantains (Platanos) resemble bananas and I suppose for that reason are sometimes referred to as cooking bananas. They look like a banana in shape but have firm, thicker skin, noticeable seams, longer length, and a pale yellow or slightly pink interior with a starchier texture. Starchy taste resembles, to an extent, that of a potato. The green (or raw) plantain is considered a staple vegetable throughout the Caribbean (tropics), Latin America, and Asia. How to make plantains -- there are many ways. One example as seen in this video is to fry 'em...I mean...fried platano or fried plantain. They are fried twice. The second time is to get a beautiful toasty look and crunchy taste. The cooked plantain are called "tostones." You can purchase this vegetable in the fresh produce sections at grocery stores or markets. Plantains are also classified as fruit when ripe. When ripe the plantain (amarillos or maduros) is in the middle stage of the fruit. The interior is yellow, and skin has a yellow color or even yellow with brownish-black spots. The "maduros" or "amarillos" have a slighly sweet, banana-like flavor with a firm texture. When they have darker skin, the taste is sweeter (simply delicious) and texture is softer. Ingredients to make tostones: Plantanos (plantains) vegetable oil salt To mold the plantains...into cool shaped tostones: You can use small dish, saucer, brown paperbag...just about anything to flatten or squash the precooked vegetable ...

Equitrekking's Emmy nominated host Darley Newman discovers Pacific Coast beaches and the fertile farmland and lush forests of the San Carlos Valley as we ride Costa Rica. Mixing horseback riding with tree climbing and hot air ballooning, Equitrekking captures the true spirit of adventure in Costa Rica. Riding gaited Paso Fino and Peruvian horses, Darley makes a trek to the famously furious Arenal Volcano, one of the most active volcanoes in the world. As smoke billows off the flowing lava, Darley and her local Costa Rican guides ride among lava rocks from the 1968 eruption. Next, Equitrekking takes viewers to the beach, taking in Costa Rica's extreme biodiversity, spotting scarlet macaws, crocodiles and iguanas, right alongside the road. Darley lives every horse rider's dream by taking a sunset ride on the beach, before heading back to San Carlos to climb a ten-story tree! Next, Darley enjoys getting in touch with the local culture, by riding in a Cabalgata, a horse festival where hundreds and sometimes tens of thousands of local Costa Ricans open up their farms so that riders can pass through them in a wild trail ride. Darley visits a frog sanctuary to view rare frogs, like the red-eyed tree Frog, and rides horses to a spot where howler monkeys make their home in the trees. Finally, Equitrekking takes viewers to hear the rainforest wake up, flying above it in a hot air balloon at dawn.
