To complete this How-To you will need: Ribs Dry seasonings Plastic wrap A charcoal or gas grill Barbecue sauce A pastry brush Aluminum foil Marinade Wood chips Step 1: Choose your ribs Decide if you want beef, pork, or lamb ribs. Then choose a cut: The meatiest pork ribs are spareribs, which are larger but less tender than baby back ribs. As for beef, short ribs are usually less expensive than pork ribs. Lamb ribs are often sold as Denver ribs and come from the lamb's breast and belly. Step 2: Remove the membranes Rinse the meat, pat it dry with paper towels, and pull off the silvery membrane -- also known as silverskin -- with your hands. Step 3: Prepare a rub Mix together whatever combination of dry seasonings you like and rub a generous amount of it into the meat with your hands, or use a prepared rub from the market. When grilling season arrives, pork ribs are a great way to feed a crowd at minimal cost. Today I'm going to share a Hawaiian-style pork ribs recipe made with pineapple juice and minced ginger. I promise you're going to love it! Chef Jason Hill of CookingSessions.com shares an amazing pork rib recipe that's sure to please. The pork rib cut we're using today is baby back ribs, which are also called loin ribs or back ribs. Each rack has about 10-14 bones. Pork spare ribs have less meat and are bonier and fattier than baby back ribs. To prepare our bbq pork ribs, you'll need about 1-2 racks, which will make 2-4 servings. First, boil the ribs on a slow boil for 90 minutes, then drain and pat dry. For this pork rib recipe, we begin with a great sauce. This sauce recipe makes enough for 2 racks of ribs. I'm using hoisin sauce as the base, but have found that not all hoisin sauces are created equal and your recipe will taste different based on the brand you choose. Hoisin is a sweet soy-based sauce made with garlic, vinegar and chiles. In a mixing bowl, combine 1 cup hoisin sauce, 1 tablespoon minced garlic, 1 tablespoon minced ginger (or garlic-shallot puree), 1 tablespoon pineapple juice, 1 tablespoon Sriracha sauce (Chinese chili paste) and 2 tablespoons honey. Baste the pork back ribs on both sides with the sauce. When preparing any pork rib recipes, it's always good to baste them on the grill too! Barbecue Ribs 2 pounds Pork babyback ribs 4 Tbsp.Berber Spice 3 Tsp. Coarse Salt AfroFood Barbecue Sauce 24 oz Ketchup 2 Tbsp. Molases 6 Oz Apple Cider Vinegar 2 Tsp. African Birdseye Chilli's 4 Tsp. Paprika 2 Tbsp. Brown Sugar 1 Tsp. Salt 2 Tsp. Garlic Powder 2 Tbsp. Soy Sauce 2 Tsp. Mustard 3 Tbsp. Onion Powder 2 oz Water Tools needed to make this dish. A working Oven A Grill 1 Baking Sheet Measuring spoons Grill brush Some Foil Paper Sauce Pan Wooden Spoon Tongs Step 1. Place Cleaned and Paper towel dried ribs on baking sheet. Sprinkle salt and berber spice on all sides of ribs, forming a coating on the ribs. Set aside. Step 2. Turn on grill and allow to heat up (About 15 minutes) Step 3. Place ribs, meaty side down on cooler zone of grill and cook for about 8 to 10 minutes per side. Be sure to check periodically to make sure meat does not burn. Step 4. Over medium heat, place sauce pan, add ketchup and all other Sauce ingredients. Stir and bring to boil. Once it start to boil, turn off heat and it read to use. Step 5. Using a grill brush slather on barbecue sauce over grilled ribs and grill for additional 5 minutes. Step 6. Remove ribs from the grill, place on baking sheet. Step 7. Preheat oven to 350 and wrap ribs in foil paper. Step 8. Place ribs in oven and cook for additional 20 minutes. Step 9. Remove from oven. Take care to remove Ribs from foil. Serve hot with other delicious sides.

Smoked Beef Ribs
I smoked a rack of beef ribs on my NBBD offset smoker. I used apple wood, hickory and a little pecan. Sauce recipe below: BBQ Sauce Recipe In a large sauce pan, add the following: 1 tbs butter 3 cloves garlic, chopped Fresh lemon juice from two medium sized lemons 1 cup apple cider vinegar 1-1 1/2 cups water 1 small white onion (diced finely) 2 cups sugar 1 tbs yellow mustard 1 tbs crushed red pepper flakes (adjust more or less to personal taste) 1 tsp black pepper 2 tbs McCormick's BBQ Seasoning 3 tsp celery seed Bring the above ingredients to a boil. Reduce heat and simmer for 20 minutes. Stir frequently. Add the following: One 24oz bottle of catchup. 2 tbs liquid smoke 1 tbs Worcestershire sauce Simmer for another 40-50 minutes, stirring frequently. Allow to cool.
