This week Pohs Kitchen is all about losing yourself in the rich and exotic spice combinations of Northern India and the ancient korma recipes originally brought to India by the Persian Mughals. Poh has met trail-blazing Indian chef Ragini Dey at a restaurant awards night where Raginis restaurant won a national award for Best Indian Restaurant. And naturally Poh has to invite Ragini back to her kitchen so she can learn a few secrets of Indian cooking. Before Ragini comes to Pohs Kitchen, Poh goes to Raginis restaurant to have a look behind the scenes. Back in the kitchen, Poh prepares a Chicken and Pistachio Korma while Ragini makes Lamb, Chickpea and Plum Korma. These two very different kormas share rich spice combinations that fill the kitchen with the aromas of India dating back to 14th century. What Poh loves is how easy both recipes are to make even though the list of spices had made it look difficult. Once all the spices are simply roasted together the rest is easy! Poh discovers that some of the best lentils in the world are grown right here in Australia. So, they also make Lentil Parathas to accompany the kormas, along with a really surprising dish Tandoori Broccoli stuffed with homemade paneer cheese, nuts, fruit and yoghurt and usually cooked in a tandoor oven.
