Chef Jason Hill of www.CookingSessions.com visits the Hawaiian pineapple fields at Dole Pineapple Plantation in Oahu to learn more about fresh pineapple. Many people are surprised to discover that pineapples do not grow on trees. The pineapple plant is relatively small — reaching between 3-5 feet tall. Peak season for Hawaiian pineapples is between April and May. Pineapple nutrition includes good sources of manganese, vitamins C and B1. Some people say it's also a great pain reliever. Other benefits of pineapple are its amazing source of bromelain, which is wonderful for joint health. James Dole started his pineapple plantation here in 1901. Inside the retail store, you can enjoy their fresh pineapple juice and buy pineapple related products, including their delicious pineapple Dole Whip, a frozen dessert topped with pineapple cocktail. Here is the recipe: Hot Pineapple BBQ Ribs RIB RUB 4 tablespoons coarse salt (kosher or sea) 2 tablespoons light brown sugar 2 teaspoons freshly ground black pepper 1 teaspoon granulated garlic 1 teaspoon onion powder 1 teaspoon ground allspice 1 teaspoon chili powder or paprika 1/2 teaspoon ground cinnamon 3 racks baby back pork ribs (4 to 5 pounds, total) Directions: Make the rub: Place the 2 tablespoons of coarse salt, brown sugar, black pepper, granulated garlic, onion powder, allspice, chili powder, and cinnamon in a small bowl and mix with your fingers, breaking up any lumps. Sprinkle the rub over both sides of the ribs, rubbing it onto the meat. Cover the ribs with plastic wrap and let cure in the refrigerator for at least 1 hour or as long as 4. The longer the ribs cure, the richer the flavor will be. How to Make Pineapple Upside Down Cake: Noreen's Kitchen
Greetings! Recently when I uploaded my chocolate biscotti video, I received a comment from elinorsantiago21, asking me if I had a good recipe for pineapple upside down cake because she wanted to make something different for dessert for her Thanksgiving feast. Well, she must have been reading my mind, because I had been thinking about showing everyone how to make this super easy recipe for a while now. You will see that it starts with a pineapple cake mix. You can substitute yellow if you cannot find the pineapple, and a hint, the only company that makes the pineapple cake mix is Duncan Hines. Add in 1 cup of reserved pineapple juice from the cans of pineapple rings, 1/2 cup oil, 4 eggs, 1 small box of vanilla instant pudding and mix everything together. Then melt one stick of butter place in the bottom of a 9 x 13 baking pan or divide between 2 9 inch round cake pans (note; do not use 8 inch cake pans for this it will bake over and make a huge mess of your oven). Add in 1 cup of brown sugar and mix well until it looks like a caramel in the bottom of the pan. Place 12 pineapple rings on top of the sugar/butter mixture and place one stemmed maraschino cherry in the center of each pineapple ring. Gently pour the cake batter over the pineapple rings and spread to the corners to even out the batter. Give the pan a good rap on the counter to break any air bubbles and place in a 350 degree oven for 30 minutes. Check to make sure the cake if firm. If you touch it lightly and it ...

Betty's Dole Pineapple Easter Cake Recipe
In this video, Betty demonstrates how to make a luscious Dole Pineapple Easter Cake. This recipe comes from the Dole Company, and it is quick, easy, elegant, and scrumptious! Ingredients: 1 can (20-oz.) Dole crushed pineapple, undrained 1 pkg. (3.4-oz.) Jello vanilla flavor instant pudding & pie filling 1 cup thawed Cool Whip whipped topping 1 pkg (10-oz.) round angel food cake, cut into 3 layers Seasonal berries Mix pineapple and dry pudding mix in medium bowl. Gently stir in whipped topping. Stack cake layers on plate, spreading pudding mixture between layers and on top of cake. Refrigerate 1 hour, or until ready to serve. Garnish with your favorite seasonal berries. I used fresh strawberries and blueberries. This is a beautiful cake that is appropriate for a family gathering, but it is also healthier and lower in calories than most cakes. And it is delicious! Happy Easter from Betty & family!!!
