Ingredients: Star anise avail at Asian Supermarket or Local supermarket 1.5kg beef bones, 5L water, 2 onions, 5 star annise , 8 cloves, cinnamon stick, ginger, 1 tbl sp salt, 10 tea sp raw sugar (or rock sugar), rice noodle, beansprout, basil, hoisin sauce, fish sauce, corriander, lemon, chilli sauce (as desired)

International dish #8 is a Vietnamese dish called PHO (pronounced "fuh"). Here is the recipe Ingredients * 4 quarts beef stock * 1 large onion, sliced into rings * 6 slices fresh ginger root * 5 star anise or 2.5 tsp of anise seed * 1 cinnamon stick * 1 teaspoon whole black peppercorn * 1 pound sirloin tip, cut into thin slices * 1/2 pound bean sprouts * 1 cup fresh basil leaves * 1 cup fresh mint leaves * 1 cup loosely packed cilantro leaves * 3 fresh jalapeno peppers, sliced into rings * 2 limes, cut into wedges * 2 (8 ounce) packages dried rice noodles * 1/2 tablespoon hoisin sauce * 1 dash hot pepper sauce Directions 1. In a large soup pot, combine broth, onion, star anise, ginger, cinnamon, and peppercorns. Bring to a boil, reduce heat, and cover. Simmer for 1 hour. 2. Arrange bean sprouts, mint, basil, and cilantro on a platter with chilies and lime. 3. Soak the noodles in hot water to cover for 15 minutes or until soft. Drain. Place equal portions of noodles into 6 large soup bowls, and place raw beef on top. Ladle hot broth over noodles and beef. Pass platter with garnishes and sauces.

Fill the stock pot full of water 7. Bring to a boil 8. Add the bones into the hot water for 10 minutes (parboil) 9. Drain the water 10. Fill astock pot with cold water with the bones 11. Put the fennel seeds, cardamom, coriander, and star anise in a tea container. 12. Add the tea container to the pot 13. Add fish sauce 14. Add rock sugar 15. Add the cinnamon stick 16. Skim the fat 17. Simmer for 3 hours

Mai was Ky's wife during his terms as South VN Air Marshall and Vice President until April 30th, 1975. In this clip Mai appeared in violet jupe moving from welcoming guests to serving eaters at table. My friend and I came in after having to wait half an hour in the lounge outside. People were very polite and friendly but to our surprise, they did not wait for our order. We had two glasses of water and two bowls of pho, half done beef, pho ta'i. In my taste it was more than fine. However, the bill reflected something else but quality of pho. I paid 136000 dong or # 8 USD for a kind of pho just second to Pho Dau ( also known Pho for Ky in the past ) and Pho 24 where I would pay less. The difference will be filled with the curiosity of many people in Saigon in seeing a lady described popularly as vo ong Ky ( Ky's wife ). So, the art at Pho ta is probably not in the quality of pho. And, after 3 months, 6 months or 1 year when the curiosity of the Saigonese has faded out, what will be next for Pho ta to attract eaters ? Only with the real value of this Vietnamese food can such a place sustain !
