A popular Korean soup with all kinds of ingredients mixed in. Full recipe is at www.maangchi.com Hot spicy jjamppong (1 serving) Ingredients Noodles for jjamppong, as well as... for stock: 10 dried anchovies, 3 shiitake mushrooms, a handful of dried kelp (1/3 cup), half a medium size onion meat and seafood: ¼ cup of pork, 3 large shrimp, 4 mussels, a few pieces of squid vegetables and seasoning: garlic, ginger, vegetable oil, oyster sauce, fish sauce, hot pepper flakes, ground black pepper, onion, carrot, green onions, leeks, white mushrooms, bamboo shoots. Let's start! First step: make stock 1. Pour 7 cups of water into a pot. Add 10 large dried anchovies (after removing heads and guts), a handful of dried kelp, half a medium sized onion, and 3 dried shiitake mushrooms. 2. Boil it for 10 minutes over high heat. Then lower the heat to low-medium and boil for 30 minutes more. Then set it aside Second step: make mixture of hot pepper flakes and vegetable oil 1. In a small bowl, mix 1½ tbs of hot pepper flakes and 1 tbs of vegetable oil. *tip: The reason we make this mixture is to prevent the hot pepper flakes from floating in the soup when it boils. You can add or decrease the amount of hot pepper flakes and vegetable oil according to your taste Third step: prepare seafood and meat 1. Ingredients (for 4 servings): Noodles (special "myun" for jjajangmyun), black bean paste, half pound of pork belly, sugar, olive oil, potato starch powder, sesame oil, Asian radish, sweet potato, zucchini, onion, cucumber. Leave it in the wok for later use 4) Heat a small skillet over medium heat with 2 tbs of vegetable oil. When that's hot, add 7 tbs of black bean paste and stir fry for 1 minute. 5) Remove the extra oil and set the black bean paste aside. 6) Cut all vegetables into 0.5 inch cubes and place them on a big plate or tray. Suzanne and I had fun at the meetup showing people how to serve so many guests. We had a huge amount of bibimguksu! You can feed a lot of people on a skeleton budget! Please let me know if you have a bibimguksu party with your friends and family. Don't forget to take a photo and send it to me. Ingredients: Thin noodles (somyeon), cucumber, egg, kimchi and kimchi juice, sugar, hot pepper paste, garlic, vinegar, sesame seeds, and sesame oil. Directions (for 2 servings): 1. Add ½ cup chopped kimchi, 1/3 cup kimchi juice, 1 clove of minced garlic, 1 ts sugar, ¼ cup hot pepper paste, 2 ts sesame oil, 1 or 2 ts vinegar, and 1 tbs roasted sesame seeds to a mixing bowl. Mix well with a wooden spoon. 2. Hardboil an egg, cut it in half, and set it aside. 3. Cut about ½ cup worth of cucumber into matchsticks and set aside. 4. Add about 7 oz (200 grams) of noodles into a pot of boiling water. Stir them with a spoon to prevent them from sticking together. Close the lid. 5. A few minutes later, they'll start boiling over. How to make sujebi, both spicy and mild versions. Full recipe, photos, and ingredients are on my website: www.maangchi.com Sujebi (mild version): 2 servings Ingredients: Flour, salt, vegetable oil, water, dried anchovies, dried kelp, green onion, potatoes, onion, fish sauce, sesame oil. Directions: 1.Combine 2 cups of all purpose flour with ¾ cup water, ½ ts salt, and 1 TBS of vegetable oil in a large bowl. Knead by hand for 10-15 minutes until the dough gets softer and sticks together firmly. 2.Put the dough into a plastic bag and keep it in the refrigerator. *tip: Using a food processor is very convenient and saves time. If you use a food processor, use the dough blade and knead all the above ingredients for 1 minute until the dough sticks together and gets lumpy. Let's make stock: 1.Place 10 cups of water in a large pot. Add about 4×6 inch square of dried kelp, and 10 dried anchovies (with the heads and guts removed). 2. Bring it to a boil for 15-20 minutes over medium high heat, then lower the heat to simmer for another 20 minutes. 3. Turn the heat off and take the anchovies and kelp out. 4. Peel 2 medium sized potatoes and cut them into 6-7 chunks each. Add them to the pot. 5. Add a half cup of sliced onion and 3 cloves of minced garlic to the pot. 6. Boil for 10 minutes over medium high heat. 7. Cut the kelp into bite sized pieces. Chop 1 stalk of green onion. Set them aside. 8. Open the pot and add 1 TBS fish sauce and the kelp strips. In this video I'm going to show you how to make 2 kinds of naengmyeon: mul naengmyeon (soup-based naengmyeon) and bibim naengmyeonis (hot spicy naengmyeon). NGREDIENTS: 1. A package of cold noodles, onion, garlic, green onions, 2. ginger, cucumber, egg, 1 bosc pear, hot pepper flakes, 3. hot pepper paste, sesame seeds, vinegar, sesame oil, corn syrup, 4. salt, soy sauce, sugar, mustard powder Directions (2 servings): 1. 1. Make stock by boiling 8 cups of water, 3-4 shiitake mushrooms, dried kelp, and 8-10dried anchovies (You will see how to make this stock in my soon du bu video) and cool it down. 2. 2. Prepare toppings for naengmyeon Mustard powder: Mix 2 tbs of mustard powder and 1 tbs water and put it on warm place to ferment it. Quick noodle rigid body dynamics test using real-world relative scale. Details...: Pasta / spaghetti relative dimensions: 2.5mm dia., 250mm length, rigid bodies' mass (and centers of) calculated based on material densities, gravity: 9.8m/s. Physics are to scale, but unfortunately my movements (external forces) in the virtual world were too fast relative to the scale (and impatience due to simulation running slow ;) this was made obvious after rendering the frames and playing them back at real-time speed. Therefore movements and playback speed are not quite to scale. That's what tests are for... to learn from. The bizarre movements (using mouse): after dropping the fork in the glass I threw the glass, then threw the bowl, played with a noodle, then dragged the fork and threw it as well. Fork, bowl and glass are compounded HACD convex decompositions. Noodles are capsule strings (no longer sticking with full radius as margin). Step by step, we are slowly getting closer; one day we'll be able to easily simulate real-world physics using any arbitrary rigid body shapes... one day... In a small desert town near Jiayu Pass in China (the first pass at the west end of the Great Wall), Wang owns a noodle shop where he, his wife and his employees also live. Not exactly a loving boss, he spends every penny to his own advantage, owing his workers their wages for months. Miserable from suffering with Wang's dark temper and abuse, his wife has an affair with Li, who can spin round sheets of noodle dough nimbly but never shows the same confidence outside the kitchen. You can serve this as a side dish to rice or noodles, and it's also good party food. Make it ahead of time and keep it in the fridge. When your guests come, cook the noodles. When you're ready to eat, place the noodles on a large plate and add golbaengi muchim over top and sprinkle some sesame seeds. They'll love it. Here is the recipe that Jack did: * 16 cups canned low-salt chicken broth * 1 3 1/2-pound chicken, cut into 8 pieces * 1/2 cup chopped onion * 2 carrots, peeled, thinly sliced * 2 celery stalks, sliced * 16 ounces dried wide egg noodles * 1/2 cup finely chopped fresh parsley Combine chicken broth and chicken in heavy large pot. Bring to boil. Reduce heat; cover partially and simmer until chicken is cooked through, about 20 minutes. Using tongs, transfer chicken to large bowl. Cool chicken and broth slightly. Discard skin and bones from chicken. Cut chicken meat into bite-size pieces and reserve. Spoon fat off top of chicken broth. Return broth to simmer. Add onion, carrots and celery. Simmer until vegetables soften, about 8 minutes. (Can be prepared 1 day ahead. Cover chicken meat and broth separately and refrigerate. Bring broth to boil before continuing.) Cook your noodles separately (very important), about 5 minutes. Season soup to taste with salt and pepper.
