Full recipe is at www.maangchi.com Hot spicy jjamppong (1 serving) Ingredients Noodles for jjamppong, as well as... for stock: 10 dried anchovies, 3 shiitake mushrooms, a handful of dried kelp (1/3 cup), half a medium size onion meat and seafood: ¼ cup of pork, 3 large shrimp, 4 mussels, a few pieces of squid vegetables and seasoning: garlic, ginger, vegetable oil, oyster sauce, fish sauce, hot pepper flakes, ground black pepper, onion, carrot, green onions, leeks, white mushrooms, bamboo shoots. Let's start! First step: make stock 1. Pour 7 cups of water into a pot. Add 10 large dried anchovies (after removing heads and guts), a handful of dried kelp, half a medium sized onion, and 3 dried shiitake mushrooms. 2. Boil it for 10 minutes over high heat. Then lower the heat to low-medium and boil for 30 minutes more. Then set it aside Second step: make mixture of hot pepper flakes and vegetable oil 1. In a small bowl, mix 1½ tbs of hot pepper flakes and 1 tbs of vegetable oil. *tip: The reason we make this mixture is to prevent the hot pepper flakes from floating in the soup when it boils. You can add or decrease the amount of hot pepper flakes and vegetable oil according to your taste Third step: prepare seafood and meat 1. Full recipe, photos, and ingredients are on my website: www.maangchi.com Sujebi (mild version): 2 servings Ingredients: Flour, salt, vegetable oil, water, dried anchovies, dried kelp, green onion, potatoes, onion, fish sauce, sesame oil. Directions: 1.Combine 2 cups of all purpose flour with ¾ cup water, ½ ts salt, and 1 TBS of vegetable oil in a large bowl. Knead by hand for 10-15 minutes until the dough gets softer and sticks together firmly. 2.Put the dough into a plastic bag and keep it in the refrigerator. *tip: Using a food processor is very convenient and saves time. If you use a food processor, use the dough blade and knead all the above ingredients for 1 minute until the dough sticks together and gets lumpy. Let's make stock: 1.Place 10 cups of water in a large pot. Add about 4×6 inch square of dried kelp, and 10 dried anchovies (with the heads and guts removed). 2. Bring it to a boil for 15-20 minutes over medium high heat, then lower the heat to simmer for another 20 minutes. 3. Turn the heat off and take the anchovies and kelp out. 4. Peel 2 medium sized potatoes and cut them into 6-7 chunks each. Add them to the pot. 5. Add a half cup of sliced onion and 3 cloves of minced garlic to the pot. 6. Boil for 10 minutes over medium high heat. 7. Cut the kelp into bite sized pieces. Chop 1 stalk of green onion. Set them aside. 8. Open the pot and add 1 TBS fish sauce and the kelp strips. Here is the recipe that Jack did: * 16 cups canned low-salt chicken broth * 1 3 1/2-pound chicken, cut into 8 pieces * 1/2 cup chopped onion * 2 carrots, peeled, thinly sliced * 2 celery stalks, sliced * 16 ounces dried wide egg noodles * 1/2 cup finely chopped fresh parsley Combine chicken broth and chicken in heavy large pot. Bring to boil. Reduce heat; cover partially and simmer until chicken is cooked through, about 20 minutes. Using tongs, transfer chicken to large bowl. Cool chicken and broth slightly. Discard skin and bones from chicken. Cut chicken meat into bite-size pieces and reserve. Spoon fat off top of chicken broth. Return broth to simmer. Add onion, carrots and celery. Simmer until vegetables soften, about 8 minutes. (Can be prepared 1 day ahead. Cover chicken meat and broth separately and refrigerate. Bring broth to boil before continuing.) Cook your noodles separately (very important), about 5 minutes. Season soup to taste with salt and pepper.

In this video, Betty demonstrates how to make her husband's favorite chicken noodle soup. It's hearty, but not heavy in fat and calories. It makes a nice lunch, but can be used as a complete dinner! Ingredients: 2 chicken breast halves, cooked and chunked (This may be leftover chicken, or you may cook fresh breasts in 2 tablespoons butter or margarine on top of stove, and chop it up.) 2 tablespoons butter or margarine (for vegetables) 1 cup chopped onion 1 cup chopped carrots 1/2 cup chopped celery 2 cans (about 14 oz. to 15 oz. each) chicken broth 1 1/2 cups medium-sized egg noodles, uncooked salt and pepper to taste Melt 2 tablespoons of butter or margarine in a large saucepan over medium heat. Add 1 cup chopped onion, 1 cup chopped carrots, and 1/2 cup chopped celery. Saute for about 10 minutes, until the onions and celery are clear, and the carrots are soft. Add the chunked chicken, and season with salt and pepper to taste. Transfer the chicken/vegetable mixture to a medium to large pot. Add 2 cans of chicken broth, and 1 1/2 cups of uncooked noodles. Place over medium heat, and bring to a boil. Reduce heat to low, cover pot with a lid, and simmer about 15 minutes, until the noodles are cooked through and all the flavors are blended. Ladle soup into individual serving bowls. Serve with saltine crackers. Guaranteed to make you feel better, if you are feeling under the weather!

Rinse the cooked soybeans in cold water. Drain and put them into a large bowl. 5. Scrub them with your hand to remove the skins. 6. Pour cold water into the bowl and the skins will float to the top. 7. Tilt the bowl and pour out the skins and water 8. Scrub the soybeans some more, add more water, drain and remove skins several times until all the skins are removed. 9. Put 1 cup of the clean soybeans into a blender. *tip: Keep the rest of the cooked and cleaned soybeans in the freezer for future use. 10. Add 1.5 tbs of mixed nuts, 1 ts of skinned and roasted sesame seeds (optional), 1 ts salt, and 2 -2 ½ cups of cold purified water. Blend for 2 minutes. 11. Add 4-5 cubes of ice and blend another minute until you get a soft, foamy, cold broth. Set it aside. 12. Boil water in a large pot. 13. Carrots (3/4 inch chop) 1 Bunch Celery (Destring and rough chop) (This is NOT one rib, the whole stalk) 2 lbs. White Onion (Rough chop) 2 Cups Italian Flat Leaf Parsley (cut once) 1 Pkg. Extra Wide Egg Noodles In a 6 ½ quart Dutch oven, place whole fryer chicken with 2 TBSP sea salt and cover with filtered water. Bring to a boil and simmer until chicken is falling off the bone. (About 1 hour or more) Remove chicken from Dutch oven, debone and remove the skin. (Retain cooking juices. This is your home made chicken broth.) Boil the chicken broth until it is reduced by almost half. Tear chicken into bite size pieces and return to Dutch oven. Add 4 TBSP sea salt, black pepper, garlic powder, paprika, cayenne, carrots, celery, onion, and parsley. Simmer until vegetables are done. If you like seafood, heres a hearty shrimp soup that takes only 15 minutes to prepare. It has only 190 calories per serving but packed with 13 grams of protein and 12 grams of healthy fiber but less than 1 gram of saturated fat. Ingredients. 1 Tbsp minced garlic 1 Tbsp minced ginger 2 Tbsp canola oil 2 C broccoli florets 1 C diced red bell pepper 8 oz cooked medium sized shrimp (peeled and deveined) 3 14 oz cans vegetable stock (to add more flavor, mix 1 can of chicken broth and 2 cans of vegetable stock) 1 tsp red pepper flakes 1 tsp sesame oil 8 oz package Skinny Noodles (drained and rinsed) 1. In large saucepan add canola oil, garlic and ginger and cook over medium heat for 30 seconds 2. Add broccoli and red bell pepper 3. Cover and cook for 4 minutes or until crisp and tender 4. Add shrimp and cook for 1 minute 5. Carefully add the broth with red pepper flakes and sesame oil 6. Bring to a boil, reduce heat 7. Add Skinny Noodles and let simmer for 3 minutes 8.
