Marinara Sauce
A really easy, delicious tomato sauce that can be used for pasta, pizza sauce, dipping sauce or for a casserole that calls for tomato sauce. This is something that can be made ahead and frozen or used right away. This is based on a recipe by Giada DeLaurentiis. ½ cup Olive Oil 1 onion, chopped 2 cloves garlic, chopped 2 stalks celery, chopped 2 carrots, chopped 2- 28 ounce cans crushed tomatoes Shredded fresh basil 2 bay leaves ½ teaspoon salt ½ teaspoon freshly ground pepper Heat olive oil in pot. Add onion and garlic and sauté for about 5 minutes. Add celery , carrots, salt and pepper and sauté for another 10 minutes. Add crushed tomatoes, basil and bay leaves. You can adjust the salt and pepper to your taste. Simmer for 1 hour, uncovered. Remove from heat and either use an immersion blender, a food processor or a blender and puree the sauce. Delicious Homemade Italian Marinara Sauce - Red Sauce Recipe
ccokingwithsugar.com A simple Marinara sauce is a staple in Italian cooking. It's easy to make, freezes well, and can be used in so many recipes. It's perfect over pasta or to make pizza, Parmesan dishes and most tomato based Italian recipes. There is no reason to buy store bought when you can make a big pot of sauce and use some and freeze the rest. I like to freeze small and large containers so I have different sizes to use no matter what I'm making. Sugar's Marinara Sauce 3-4 tablespoons olive oil 4 -28 oz cans crushed tomatoes or whole plum tomatoes in sauce 6-8 cloves of garlic, chopped 1 of a medium size onion, chopped or 1 whole small onion, chopped 1/3 cup fresh basil, torn or cut into long strips 2 bay leaves 1 can of water Salt and fresh ground black pepper Pinch of sugar (optional) Directions: Heat olive oil in large pot. Add onions and garlic and a good sprinkle of salt and pepper. Cook over medium high heat for about 5 minutes until onions are transparent but making sure the onions and garlic don't burn. Add the crushed tomatoes along with a can of water and the fresh basil. If you are using the whole tomatoes, blend them in the bender or use an immersion blender to chop them right in the pot. You can also do what I do and give them a good squeeze with your hands. Allow sauce to simmer uncovered over medium high heat for about 30 -45 minutes until thickened. Be sure the sauce is simmering but not boiling and give it a good stir now and then so it doesn't ...

This is a great recipe to use if you are in a hurry, and you are looking for a recipe that is tasty and also economical! Ingredients: 1 medium onion, chopped 3 cloves of garlic, minced ¼ to ½ teaspoon crushed red pepper flakes 3 tablespoons extra virgin olive oil 16-oz. can tomato sauce 28-oz. can crushed tomatoes 3 tablespoons fresh parsley, chopped (You may used dried herbs in this recipe; just use 1/3 as much as listed for fresh herbs.) 1 1/2 tablespoons fresh oregano, chopped 2 tablespoons fresh basil, chopped 1 teaspoon salt ½ teaspoon ground black pepper ½ teaspoon lemon juice ½ cup shredded Parmesan cheese 16-oz. package uncooked spaghetti (I used only ½ of a 16-oz. package, but I had a lot of sauce left over!) 1 teaspoon salt for cooking spaghetti (optional) In a deep skillet, heat 3 tablespoons olive oil over medium heat. Add 1 chopped onion, 2 minced cloves of garlic, and ¼ to ½ teaspoon crushed red pepper flakes. Sauté until the onion is clear., about 5 minutes. Add a 16-oz. can of tomato sauce, a 28-oz. can of crushed tomatoes, 3 tablespoons fresh chopped parsley, 1 1/2 tablespoons chopped fresh oregano, 2 tablespoons fresh chopped basil, 1 teaspoon salt, and ½ teaspoon ground black pepper. Mock (vegetarian) Meatballs with Marinara
Mock Meatballs 2 cups brown basmati rice, cooked 1 T vegetable bouillon (or two cubes) 2 T sun dried tomatoes, chopped 1 t. onion powder 1 t. garlic powder 1 t. dried parsley 1 t. dried basil 2-3 T. Peanut oil Combine all ingredients in a large bowl. Shape into small meatball shapes by pressing with your hands. If mixture is too dry, add touch of water 1 teaspoon at a time until moist enough to form ball shape. The mixture should be slightly moist—not wet and sticky. Next, brown the "meatballs" in a skillet by gently placing into a pan with hot peanut oil. There should be enough oil in the bottom of the pan that the "meatballs" can easily be moved without them sticking to the bottom of the pan. Gently turn every minute or so until all sides are browned. Marinara 2 T Olive oil 1 c. chopped onion 2 t. minced garlic 28 oz. can diced tomatoes 1 t. dried basil 1 t. dried oregano 1 t. salt 1 t. sugar Sauté onion and garlic in olive oil until tender. Add remaining ingredients. Bring to a boil and then simmer for 30 minutes. Serve mock meatballs alone with marinara, use spiral cutter to create "pasta" using raw zucchini or serve on a bed of your favorite whole grain pasta.

Cheese Ravioli with Marinara Sauce and Garlic Bread Serves:4 Marinara Sauce: 1 medium yellow onion, chopped 3 cloves garlic, chopped 4 carrots, peeled and chopped 1 cup of Merlot 2 28-oz cans crushed tomatoes 3 bay leaves (dried or fresh) 1 tsp of oregano Salt and Pepper to taste Chop up onions, garlic and carrots. Sauté on a medium high heat until the onions become translucent and the carrots are tender. Add a cup of merlot and reduce to about half which is 10-15 minutes. After wine reduces put in the tomatoes, bay leaves, oregano and salt and pepper to taste. Allow for sauce to sit on low for 4-6 hours. Ravioli Filling: 1 15-oz container of ricotta cheese 1 clove of garlic, chopped 2 tbls of fresh parsley, chopped 3 fresh basil leaves, chopped 1 cup of fresh parmesan cheese 1 egg 2 tbls of EVOO Salt and Pepper Put all ingredients into bowl and mix well. Ravioli: 40 wonton wraps 1 egg, scrambled Put a teaspoon of filling in the center of the wonton wrap. Egg wash the outer sides of the wonton and then place the other wonton wrap over top and push down to seal the edges. Bring a pot of water to a boil, salt the water then place the ravioli in the water for 2-3 minutes or until ravioli floats to the top. Garlic Bread: 1 loaf of Italian bread 1-2 tbls of EVOO 2 cloves of garlic Cut the bread in half and drizzle the bread with EVOO. Place under broiler on high for 2-3 minutes. Take bread out of the oven and run the clove of garlic over top. Serve and Enjoy!

In a sauce pot on medium heat add the olive oil & sauté the onion until translucent. Add the garlic & cook until golden brown, slightly season with salt, pepper & crushed red pepper. Add wine and cook until it reduces by half. 2. In a bowl using your hands or a potato masher, crush tomatoes until desired size is achieved. The tomatoes will breakdowns as they cook so don't crush them too small. 3. Add tomatoes and re-season with salt & pepper to taste. Bring tomatoes to a boil and then reduce to medium heat. Add basil, parsley & Romano cheese. Continue to cook on low to medium heat for 30 to 35 minutes or until desired thickness.

Mussels Marinara - Bland is Boring - blandisboring.com 2 kg mussels - debearded, scrubbed and rinsed 2 tbsp olive oil 1/2 medium onion, chopped 1 carrot, chopped 1/2 green pepper, chopped 5 garlic cloves, sliced very thin 1 tsp Dried oregano 1/2 tsp dried Basil 1/2 tsp dried sweet red pepper flakes 1/2 tsp salt 1/2 tsp freshly ground pepper 1/2 tsp sambal olek chili sauce 1 tsp Franks Red Hot 3/4 cup of lager beer or stock (or 1/2 cup of wine) 2 cups of crushed tomatoes fresh basil leaves or flat-leaf parsley Heat a deep pot over medium heat and pour in the olive oil. Add the onions, carrots and green peppers and sweat for 2 minutes. Add garlic, fry for 2 minutes, and then all the dry spices and let fry for another 2-3 minutes. Add hot sauces and crushed tomatoes, reduce heat to medium low and let simmer for 8-10 minutes. Add lager or stock, bring to a boil and add mussels. Stir once, cover for about 10 minutes until the steam forces all the mussels to open. Discard any mussels that dont open and transfer mussels marina to a deep platter. Garnish with torn basil leaves or parsley and serve with some warm, fresh bread. Enjoy!
