Lovitz we're calling our appetizer, Lovitz Ab Tenderloin with Goat Cheese Topper! See the whole recipe below: Ingredients: 1 pound beef tenderloin, frozen for at least 30 minutes 2 shallots 2 cups of baby arugula 4 ounces goat cheese, room temperature 1/4 cup capers, rinsed and drained 1 lemon 2 teaspoons truffle oil (optional) coarse sea salt black pepper 1 loaf french bread On a medium/high flame with 2 tsp of truffle oil/regular olive oil you want to lightly sear your beef tenderloin about 2 minutes on each side Set aside to cool (5 minutes) Mix 4 ounces of room temperature goat cheese with 1/4 cup of capers Thinly slice cooked beef tenderloin Mound the goat cheese and capers on top of the beef medallions. Salt and pepper to taste Then garnish with diced shallots Drizzle of truffle or olive oil. Place washed Arugula onto the toasted baguette with the tenderloin to follow. Serve with lemon wedges for a refreshing garnish. Cocktail: We are going to make an El Vocho which is a shooter, the ingredients are really simple and very fresh, with the end result being a big punch! El Vocho is a light twist on the Sangrita.
