Ingredients : For Broth : 6 Pieces of Dried Kelp / Dried Anchovies Korean Red / Green Hot Peppers (1/2) 1/3 of a Zucchini 1/2 of a Small Size Onion 1 Handful of Tofu 1 Handful of Enokitake Mushrooms 1 TBS of Soybeanpaste 1 TSP of Red Pepper Powder



전복죽 Jeonbokjuk (My Korean recipe)

Jeonbokjuk is a recipe to enjoy and pamper the soul and is also a good start to know the flavors of Korean cuisine. Ingredients For 2-3 servings. Prep time: 50 minutes Cooking time: 40 minutes 1 cup of rice 1 cup of abalone. 2 tbs sesame oil. 1 ts salt. 1 tbs fish sauce. 2 cloves of garlic 2 green onions. (1 / 4 cup) ¼ cup of chopped carrot. 2 liters of water. 1 sheet of roasted laver 1.Cut the carrot into brunoise (small cubes). 2.Now cut the green onions into small pieces 3.Mince 2 cloves of garlic finely 4.Heat a pot over medium high heat y add 2 tbs sesame oil. 5.Add the minced garlic and stir it for 20 seconds. 8.Add abalone, half the green onions, carrots and move for 30 seconds. 9.Add the soaked rice. stirring for a few minutes until the grains of rice look translucent. 10.Add the water and lower the heat to low heat. 11.Add Salt, and carefully remove 12.Close the lid and cook it for about 30 minutes. 13.Open the lid, remove impurities and move. 14.10 minutes after, opening the lid turn off the heat and add the fish sauce. And is almost ready to eat, served on a bowl. 15.Roast a sheet of laver. 16.To server the porridge sprinkle chopped green onion over the top. 17.Cut the laver with scissors and put it with grace in the bowl. www.maangchi.com Music: "Jindo Arirang" played by Chae Okseon (gayageum musical instrument) Ingredients (for 3-4 servings): 3 pounds (about 1.5 kg) of chicken chunks, salt, ground black pepper, potato starch powder, flour,sweet rice flour, egg, baking soda, canola oil (or vegetable oil), garlic, ketchup, hot pepper paste,rice syrup, vinegar. See my site for pictures and descriptions of ingredients: www.maangchi.com Directions: 1. Rinse chunks of chicken in cold water. Drain. *tip: You could use chicken wings, too. About 24 wings will be 3 pounds. 2. Add 1 tbs ground black pepper and 1 ts kosher salt. 3. Add ½ cup potato starch powder, ¼ cup all-purpose flour, ¼ cup sweet rice flour, 1 ts baking soda, and 1 egg. 4. Mix well by hand and completely coat the chicken. 5. Put 6-7 cups of canola oil in a wok or frying pan and heat it up. 6. After it's heated for about 7-8 minutes, test if the oil is ready by dipping a sample chunk of chicken into the oil. If the oil bubbles, it's the right temperature to start frying. Fry them using the double-frying method: 1. Fry the chicken chunks for 10 minutes over high heat. 2. Take them out of the oil and shake them off in a strainer. Let them sit for a few minutes. 3. Fry them again for another 10 minutes until all pieces look golden brown and are crunchy outside. *tip: If your skillet is not large enough to fry all the chicken at once, divide it into batches like I do in the video. Eggplant side dish (gaji namul)

Gaji namul is a sidedish made with eggplants. It's a very traditional Korean vegetarian dish. Hope you like it! Full recipe: www.maangchi.com Ingredients: 3 medium sized Asian eggplant, 2½ tbs soy sauce, 1 chopped green onion, 2 cloves of garlic, ½ tbs of roasted sesame seeds, ½ tbs of sesame oil, 1 ts of hot pepper flakes 1. Cut 3 medium sized Asian eggplants into 2 or 3 pieces. Then cut each piece in half lengthwise 2. Pour 2 cups of water into a steamer, and place the pieces of eggplant inside. Bring to a boil for 15 minutes over high heat. 3. Turn the heat off and move the cooked eggplant to a bowl. Set it aside to cool down. 4. After the eggplant has cooled, drain the liquid from the bottom of the bowl. 5. Tear each piece of eggplant lengthwise with your fingers, and put the strips into a large bowl. 6. Add these seasonings to the bowl: 2 cloves of minced garlic, 1 ts of hot pepper flakes, 1 chopped green onion, ½ tbs sesame seeds, 2½ tbs soy sauce, and ½ tbs sesame oil. 7. Mix it all together with your hand. Serve with rice as a side dish.

How to make this awesome sidedish for your lunchbox. Full recipe on my website: www.maangchi.com Ingredients: 1 package of dried shredded squid (1 pound), hot pepper paste, garlic, olive oil, corn syrup (orrice syrup), sesame oil, roasted sesame seeds. Directions: 1. Cut 1 pound of dried shredded squid into bite sized pieces and set aside. 2. Make seasoning sauce by mixing ½ cup hot pepper paste, 4 cloves minced garlic, 1/3 cup olive oil (or vegetable oil), mulyeot (either rice syrup or corn syrup) 1/3 cup, 2 tbssesame oil in a large bowl with a wooden spoon until it becomes a shiny red sauce. 3. Put the squid strips into the seasoning sauce and mix it with a spoon. 4. Transfer it in an air-tight container and keep in the refrigerator You could serve it with rice as side dish. Sprinkle some roasted sesame seeds just before serving. Let's prepare a lunchbox with the ojingeochae muchim that we learned today! Cut a sheet of kim (laver) in half with scissors and place a spoonful of rice on it. Spread thinly, then roll it. Cut into smaller pieces, and you have cigarette kimbap!

How to make kong jang, a Korean soybean sidedish

Kong Jang is made with soybeans and Koreans eat it as a side dish for any meal. It's a little sweet and sticky, like honey, and addictive to eat. You're going to love it! Go to my blog for the full recipe: blog.maangchi.com Soybean side dish (Kongjang or Kongjorim) Ingredients: 1 cup of soy beans, ½ cup of soy sauce, 1 ts of vegetable oil, 2 cloves of minced garlic,½ cup of sugar, ½ tbs sesame seeds. Directions: Rinse 1 cup of soy beans and drain it and place in a skillet Add 2 cups of water in the skillet and soak the beans for 8 hours Boil the beans on the stove over medium high heat for 10 minutes *Tip: about 5 minutes later, it may boil over, and then open the lid and turn down the heat over medium heat and cook another 5 minutes Add ½ cup of soy sauce, 1 ts of vegetable oil, 2 cloves of minced garlic, and ½ cup of sugar and boil it over medium heat for 30 minutes (cover the lid) Open the lid of the pot and heat it up over high heat and stir the beans occasionally with a spoon until the beans look shinny. *Tip: Beans will be submerged with shiny and sticky seasoning sauce Turn off the heat and add 1 tbs of toasted sesame seed and cool it down. Transfer it into a container and keep it in the refrigerator

Cooking Korean-style Stir-fried squid with Maangchi. Full recipe: www.maangchi.com Hot and spicy stir fried squid Ingredients: • 1 large squid (1 lb) • soy sauce • sugar, hot pepper flakes • green chili pepper, • carrot, garlic, onion, and green onions. Directions for 2 servings: 1. Remove the squid's intestines 2. Wash and drain the squid. Cut it into strips (about 2-3 cups worth) and place them in a bowl. 3. Prepare a big plate for your vegetables. 4. Cut a carrot thinly and diagonally and place it on a big plate. 5. Cut 12 green onions into pieces 5-7 cm in length and put them on the plate. 6. Slice 1 medium size onion and put it on the plate. 7. Slice 1 green chili pepper and put it on the plate. 8. Prepare a small bowl and make hot paste by mixing 5 cloves of minced garlic, 2½ tbs of soy sauce, 2 tbs hot pepper flakes, and 1 tbs sugar. 9. Heat a pan or wok over high heat and put 1 tbs olive oil in it. 10. Stir fry by adding vegetables in this order: carrots, onions, green onions, and chili pepper. Stir fry for about 2 minutes 11. Add squid strips and the hot paste and continue to stir fry for a few minutes 12. Sprinkle some sesame oil and transfer to a serving dish and serve with rice.

Cod pancake (Daegujeon)

Full recipe: www.maangchi.com In this video, I am going to show you how to make "jeon". Jeon is korean traditional food breaded with flour and eggs. There are many kinds of jeon, but this one is made with cod. Ingredients: Cod filets (400 grams), flour, olive oil, garlic, salt, ground black pepper, eggs, a red chili pepper, soy sauce, vinegar Directions: 1. You can use fresh or frozen cod. If it's frozen, thaw it out in the refrigerator. 2. Rinse the filets in cold water and gently dry them using a paper towel or cotton cloth 3. Slice it thinly and put it in a bowl. 4. Sprinkle 1 ts of salt, 2 cloves of minced garlic, and 1 pinch of black pepper into the bowl of cod slices and gently mix it up by hand. 5. Pour 1 cup of flour into the bowl with the cod, and mix it quickly with your hand so that the cod is lightly breaded. 6. Beat 2 eggs in a small bowl and add a pinch of salt. 7. Add 1 chopped green onion and red chili pepper into the beaten eggs. 8. Heat a pan on the stove over medium high heat. 9. Add 1 tbs of olive oil or vegetable oil to the pan. 10. Piece by piece, dip your breaded cod into the beaten eggs, and then place the pieces onto the heated pan. 11. Lower the heat to medium and cook it. 12. Turn it over using a spatula or spoon. 13. Add more oil if needed. 14. On a big plate, place green lettuce on the bottom and place the cooked fish on it. Now it's "jeon"! 15. Serve it with a dipping sauce of 2 tbs of soy sauce and 1 or 2 tbs of vinegar.



Korean spinach side dish (sigeumchi namul)

This spinach dish called "sigeumchi namul" a side dish that Koreans eat with rice. It'll be good recipe for vegetarians. full recipe: www.maangchi.com Ingredients: • 1 bunch of spinach • 2 cloves of garlic • 1 green onion • 1.5 tbs of soy sauce • sesame oil and sesame seeds Directions: 1. In boiling water, add 1 ts of salt and blanch a bunch of spinach for 30 seconds after removing dead the leaves and roots. 2. Drain the cooked spinach and rinse it in cold water 3 times, and squeeze it gently to get the water out. 3. Cut the spinach a few times and set it aside. 4. Place 2 cloves of minced garlic, 1 chopped green onion, 1.5 tbs of soy sauce and ½ tbs sesame oil in a large bowl and mix them all up with a spoon. 5. Place the spinach into the sauce and mix by hand. 6. Transfer the spinach onto a serving plate and sprinkle ½ tbs of toasted sesame seeds.
