Known as "The Land of Morning Calm", South Korea is a country in which tradition and modernity come face to face. The capital, Seoul, with its 11 million inhabitants, is a centre of excellence for the full range of South Korean cuisine. Anthropologists say, in an ever-changing world, food is one of the characteristics of a society that changes the most slowly. South Korea is no exception.
Korean Cuisine Seafood Pancake (Haemul Pajeon)
Korean Appetizer: Seafood Pancake (Haemul Pajeon) The Ingredients: 1 cup All Purpose flour (buchimgalu package) 1/4 cup Sweet Rice Powder 1 cup Cold Water 2 Eggs 6 pieces of Shrimp 5-6 pieces of Mussels 5 pieces of scallops or clam 1 cup of Squid 8 pieces of Green Onion 1 Red Pepper 1/4 Canola Oil Dipping Sauce 2 tbsp. Soy Sauce 1 tbsp. Vinegar pinch of Sugar Little bit of chopped green onion, sesame seed, and red pepper flakes 1. In a large bowl mix flour, sweet rice powder, eggs and water until smooth. You may need to add more flour or water to get the desired consistency of the pancake batter. Add the green onion to the pancake batter and coat evenly. 2. Heat the skillet over medium heat and coat the pan with a small amount of canola oil. Place some of the green onion and a 1/2 cup of batter onto the hot skillet. Place even amounts of seafood on top of the pancake and some thinly sliced red pepper. 3. Let it cook for 4 minutes, until the bottom is lightly brown. Flip and brown the other side and cook for an additional 3-4 minutes. *Make sure that all of the pancakes surface touches the skillet by pressing down on it with a spatula. 4. Once the pancake is done, remove from skillet and place on a plate. Cut the seafood pancake into 8 pieces with a pizza cutter and serve with the dipping sauce. Cooking Korean food: 2 tofu sidedishes
How to make "dubu ganjang jorim" and "dubu buchim yangnyumjang," two Korean sidedishes. Here's the full recipe: www.maangchi.com Tofu is pronounced as "doo boo" in Korean. If you say doo boo in front of Koreans, they will be impressed! Panfried tofu with spicy sauce (Dubu buchim yangnyumjang) Ingredients: Half package of tofu (about 10 oz: 280 grams), soy sauce, hot pepper flakes, sugar, green onion, garlic, sesame oil, roasted sesame seeds 1.Slice the tofu into bite size pieces (¼ inch thick rectangles). You should get 10 pieces. Towel off each piece with a paper towel. 2. Heat a pan with 1 to 2 tbs of vegetable oil. Add the tofu and lower the heat. Cook over low heat about 5-7 minutes. 3. When the bottom of the tofu looks golden brown, turn it over and cook another 5 minutes. 4. Transfer the cooked tofu to a serving plate. 5. Make your sauce in a small bowl by mixing these ingredients: 1 clove of minced garlic, 1 chopped green onion, 1 ts hot pepper flakes, 1 ts sugar (or honey), 2 tbs soy sauce, and 2 ts sesame oil 6. Spoon the sauce evenly over the tofu, and sprinkle some roasted sesame seeds just before serving. 7. Sempio Recipes - Korean Food: How to cook Jjim Dak (Seasoned and Simmered Chicken)
www.sempio.com :: Ingredients:: - 500g chicken cut in big pieces - 1 sweet potato, cut into thick pieces - 1 king oyster mushroom, thinly sliced - 3 dried shiitake mushrooms, thinly sliced - 5 stems spinach, cut in half lengthwise - 100g Sempio Sweet Potato Glass Noodles, soaked - 1/2 carrot, cut into thick pieces - rice cake(as needed) - a pinch of sesame seeds - 5 dried red chili peppers [For the Seasoning] - 4 tbsp Sempio Soy Sauce Premium - 1 tbsp cooking wine - 1 tbsp Sempio Soup Base, Bonito - 1 tbsp brown sugar - 2 tbsp Sempio Corn Syrup - 1/2 tbsp ginger juice - ground black pepper - 3 cups chicken stock :: Directions :: 1. Rinse the chicken pieces and add them to boiling water. Drain the chicken in a sieve covered with paper towel. (Tip: The paper towel is good for eliminating impurities comes out from the chicken.) 2. For the sauce, combine all the seasoning ingredients in a large bowl and cook it until it boils. 3. Pour the chicken stock into a frying pan and add the seasoning mixture. 4. When the seasoning sauce starts to boil, add the chicken and the sweet potato. Cook until the sauce is thickened. 5. If the noodles are too long, cut the Sempio Sweet Potato Noodles in half. 6. Add the shiitake mushrooms, carrot, onion, spinach, rice cake and sweet potato noodles to the chicken and simmer until all ingredients are cooked. 7. Serve and enjoy a delicious meal!

A raw egg is put in the jjigae while it is still boiling. This dish is eaten with a bowl of cooked white rice and several banchan (side dishes). Ingredients: - 1 tbsp Sempio Joseon Soy Sauce - Naturally Brewed Soy Sauce for Soup (Wheat Free) - 1 tbsp Sempio Guksi Janguk Sauce - Noodle Soup Base (Anchovy) - 100 gr. Kimchi - 1 Block (approx. 500 ~ 600 gr.) Acorn Starch Jelly - 2 cups Anchovy Stock - 1 tbsp Sesame Oil - Ground Sesame with Salt - Dried Laver (Seaweed) - Egg Garnish :: For dried anchovy stock :: - 3 cups of water - 5 gr Sempio dried anchovies (for stock) - 5 gr Sempio dried kelp - 2 dried shiitake mushrooms. :: Directions :: 1. To prepare the dried anchovy stock, put the 3 cups of water in a pot and add the dried anchovies, dried kelp and dried shiitake mushrooms. Once the water is boiling, reduce the heat to low and simmer for 40mins. Set aside. 2. Blanch acorn starch jelly in boiling water. 3. Cut kimchi into bite-sized pieces. Add the sesame oil and mix. 4. Remove the acorn starch jelly, rinse under cold running water, and drain. 5. Put the anchovy stock, water, naturally brewed soy sauce for soup and noodle soup base (anchovy) into a large pot and let it boil. 6. Cut the acorn starch jelly into thick strips and place them in a medium-sized bowl. 7. Garnish with egg slices and Kimchi. 6. Pour anchovy stock over acorn starch and serve garnished with dried laver. Enjoy a delicious and healthy meal! ::::::::::::::::::::::: Did you know...
