www.maangchi.com Music: "Jindo Arirang" played by Chae Okseon (gayageum musical instrument) Ingredients (for 3-4 servings): 3 pounds (about 1.5 kg) of chicken chunks, salt, ground black pepper, potato starch powder, flour,sweet rice flour, egg, baking soda, canola oil (or vegetable oil), garlic, ketchup, hot pepper paste,rice syrup, vinegar. See my site for pictures and descriptions of ingredients: www.maangchi.com Directions: 1. Rinse chunks of chicken in cold water. Drain. *tip: You could use chicken wings, too. About 24 wings will be 3 pounds. 2. Add 1 tbs ground black pepper and 1 ts kosher salt. 3. Add ½ cup potato starch powder, ¼ cup all-purpose flour, ¼ cup sweet rice flour, 1 ts baking soda, and 1 egg. 4. Mix well by hand and completely coat the chicken. 5. Put 6-7 cups of canola oil in a wok or frying pan and heat it up. 6. After it's heated for about 7-8 minutes, test if the oil is ready by dipping a sample chunk of chicken into the oil. If the oil bubbles, it's the right temperature to start frying. Fry them using the double-frying method: 1. Fry the chicken chunks for 10 minutes over high heat. 2. Take them out of the oil and shake them off in a strainer. Let them sit for a few minutes. 3. Fry them again for another 10 minutes until all pieces look golden brown and are crunchy outside. *tip: If your skillet is not large enough to fry all the chicken at once, divide it into batches like I do in the video. Rinse the chicken pieces and add them to boiling water. Drain the chicken in a sieve covered with paper towel. (Tip: The paper towel is good for eliminating impurities comes out from the chicken.) 2. For the sauce, combine all the seasoning ingredients in a large bowl and cook it until it boils. 3. Pour the chicken stock into a frying pan and add the seasoning mixture. 4. When the seasoning sauce starts to boil, add the chicken and the sweet potato. Cook until the sauce is thickened. 5. If the noodles are too long, cut the Sempio Sweet Potato Noodles in half. 6. Add the shiitake mushrooms, carrot, onion, spinach, rice cake and sweet potato noodles to the chicken and simmer until all ingredients are cooked. 7. Serve and enjoy a delicious meal!

How to make these wonderful Korean cookies. Full recipe is coming soon on my website www.maangchi.com Ingredients: Flour, salt, sugar, ginger, pine nuts, water, cinnamon powder, and vegetable oil. Directions: 1.In a large stainless bowl, place 2 cups of all purpose flour, ½ ts salt, 1 TBS sugar, 1 TBS ginger juice, and ½ cup water. Knead by hand for about 20 minutes. *tip: If you use a food processor, kneading takes about 2 minutes. Be sure to change the blades on your food processor to dough-making blades!. 2. Put the cookie dough in a plastic bag and set it aside at least for 30 minutes. 3. Chop 2 TBS of pine nuts to garnish the cookies. Set aside. 4. Take the dough out from the plastic bag and roll it out with a rolling pin, into a roughly rectangular shape (about 50 cm x 40 cm, and 2 mm -- or 1/16 inch - thick). 5. Cut the sheet of cookie dough into little 2 cm x 6 cm rectangles. 6. Put the leftover dough edges into a plastic bag to protect them from drying out. 7. Make 3 slits in the middle of each piece of dough. 8. Push one end of the dough through the center slit to a make ribbon shape. 9. Take the leftover dough out and spread it on the cutting board with the rolling pin. Cut it into any of your favorite shapes: triangles, squares, whatever -- or use a cookie cutter. 10. Directions for 2 servings: 1. Remove the squid's intestines 2. Wash and drain the squid. Cut it into strips (about 2-3 cups worth) and place them in a bowl. 3. Prepare a big plate for your vegetables. 4. Cut a carrot thinly and diagonally and place it on a big plate. 5. Cut 12 green onions into pieces 5-7 cm in length and put them on the plate. 6. Slice 1 medium size onion and put it on the plate. 7. Slice 1 green chili pepper and put it on the plate. 8. Prepare a small bowl and make hot paste by mixing 5 cloves of minced garlic, 2½ tbs of soy sauce, 2 tbs hot pepper flakes, and 1 tbs sugar. 9. Heat a pan or wok over high heat and put 1 tbs olive oil in it. 10. Stir fry by adding vegetables in this order: carrots, onions, green onions, and chili pepper. Stir fry for about 2 minutes 11. The full recipe is on my website: www.maangchi.com Ingredients (for 4-6 servings): 380 grams (18 OZ) filet minon (tenderloin), Korean pear, soy sauce, honey, sesame oil, garlic, black ground pepper, salt, pine nuts, roasted sesame seeds, endive (or lettuce). Steak Preparation: 1. Rinse filet minon under a little cold running water and dry with paper towel. 2. Wrap it in a cotton cloth and keep it in the freezer for 1 hour. 3. In a bowl, add 2 cups of water and 1 tbs sugar. Stir it well. 4. Peel a Korean pear and cut it into thin matchsticks (about 3-4 cups). 5. Soak the pear strips in the bowl for 5 minutes. Then drain and set aside Make sauce: 1. Finely mince a dozen cloves of garlic. Put into a mixing bowl with 1½ tbs soy sauce, 1½ tbs honey (or 2 tbs brown sugar), 1/4 ts salt, 2 tbs sesame oil, and a pinch of ground black pepper. Mix well. Put it together: 1. Take the beef out of the freezer. Cut it into thin matchsticks, and mix with the seasoning sauce *tip: you can add green lettuce on pear strips 2. Sprinkle some roasted sesame seeds and pine nuts over top before serving. How to serve: You could use as an appetizer, a side dish with alcohol, or a main dish for a party.

Iwww.maangchi.com Spicy dongchimiguksu Ingredients: 100 grams (3.5 oz) of thin noodles (somyeon) 1 cup of dongchimi radish cut into thin matchsticks and mixed with 1 ts hot pepper flakes, ½ ts sugar, ¼ ts salt, and 2 ts sesame oil ½ cup worth cucumber, cut into matchsticks 2 cups dongchimi broth 1 cup water ½ ts salt 1 tbs sugar 2 ts vinegar 3 tbs kimchi juice halved hard-boiled egg Directions: Mix the dongchimi broth, water, salt, sugar, vinegar, and kimchi juice in a bowl. Put in the freezer for 2-3 hours until slushy. Boil the noodles in a large pot for a few minutes. Rinse in cold water a couple of times and drain. Put the noodles in a large serving bowl. Pour the cold slushy broth over the noodles. Add radish, cucumber, and the halved hard-boiled egg. Sprinkle some toasted sesame seeds over top and serve immediately. Non-spicy dongchimiguksu ngredients: 100 grams (3.5 oz) of thin noodles (somyeon) 1 cup of dongchimi radish cut into thin matchsticks ½ cup worth cucumber, cut into match sticks. Directions (Cooking time: 2 hours) Make sweet red bean filling: 1. Wash and drain 1 cup of dried red beans (azuki beans) and place them in a thick bottomed pot. 2. Add 3 cups of water and bring to a boil over medium high heat for 10 minutes with the lid closed. 3. Lower the heat and simmer for about 1½ hours. If the beans haven't softened after 1½ hours, add more water and cook over low heat until they are soft and can be well mashed. 4. Mash the beans with a wooden spoon (or food processor) until smooth. 5. Put the beans back into the pot and add ¾ cup brown sugar, ¼ ts salt, 1 ts vanilla extract, and 2-3 tbs rice or corn syrup. 6. Stir with a wooden spoon over low heat until the sugar is dissolved and the paste looks a little shiny. 7. Divide the paste into 2 even halves. Keep one half of the paste in the fridge or freezer for future use. 8. Divide the remaining paste into 8 equal pieces and roll each piece into a ball. Set them aside. Squid soup

The recipe: www.maangchi.com Tanya's YouTube channel: www.youtube.com Ingredients: (for 2 servings) 9 ounces (250 grams) of squid cleaned and cut into 3 inch x ½ inch strips 9 ounces (250 grams) of radish sliced thinly into bite-sized pieces half a medium onion, sliced (½ cup worth) 3 stalks of green onions, cut into 2 inch long pieces ½ cup worth of leeks, cut into 2 inch long pieces (you can replace this with 2 green onions) 2 cloves of minced garlic 2 tbs hot pepper flakes 2 tbs soy sauce 1 tbs fish sauce Directions: (cooking time: 40 minutes) Place all ingredients into a pot and mix well with a spoon until well incorporated. Add 3 cups of water and bring to a boil over high heat for 15 minutes. Turn down the heat over medium heat and cook another 25 minutes until the radish is cooked. The radish will look a little translucent when it's cooked well. Serve hot with rice and more side dishes.

Korean Stirfried Noodle Recipe - Japchae

Japchae is a delicious Korean stirfried noodle dish made with tender slivers of marinated beef and an assortment of healthy colourful vegetables all mixed together with a signature chewy sweet potato noodle called dangmyun. This dish is typically served at room temperature as a side, but can also be enjoyed as a main. This recipe is perfect for potlucks... just sayin. Seasoned dried shredded squid (ojingeochae muchim)

How to make this awesome sidedish for your lunchbox. Full recipe on my website: www.maangchi.com Ingredients: 1 package of dried shredded squid (1 pound), hot pepper paste, garlic, olive oil, corn syrup (orrice syrup), sesame oil, roasted sesame seeds. Directions: 1. Cut 1 pound of dried shredded squid into bite sized pieces and set aside. 2. Make seasoning sauce by mixing ½ cup hot pepper paste, 4 cloves minced garlic, 1/3 cup olive oil (or vegetable oil), mulyeot (either rice syrup or corn syrup) 1/3 cup, 2 tbssesame oil in a large bowl with a wooden spoon until it becomes a shiny red sauce. 3. Put the squid strips into the seasoning sauce and mix it with a spoon. 4. Transfer it in an air-tight container and keep in the refrigerator You could serve it with rice as side dish. Sprinkle some roasted sesame seeds just before serving. Let's prepare a lunchbox with the ojingeochae muchim that we learned today! Cut a sheet of kim (laver) in half with scissors and place a spoonful of rice on it. Spread thinly, then roll it. Cut into smaller pieces, and you have cigarette kimbap!



Korean spicy stir-fried pork

www.maangchi.com Korean style spicy stir-fried pork. It's called doejibulgogi, doejigogi bokkeum, or jeyukbokkeum. The recipe is very easy and fast. Song: Jaurim's "I'm my fan" (팬이야) Ingredients (for 4 servings): 600 grams(1 ½ pound) of pork belly (or pork shoulder), hot pepper paste, onion, garlic, ginger, green onions, green chili pepper, hot pepper paste, hot pepper flakes, natural brown sugar, soy sauce, black ground pepper, sesame oil, roasted sesame seeds, and lettuce. Directions: 1. In a thick bottomed wok or pan, add these ingredients: o 1½ pounds (600 grams) of pork belly of bite size pieces about ¼ inch thick o 1 sliced medium onion, 3 chopped green onions o 4 cloves of minced garlic, ½ ts minced ginger o 1 chopped green chili pepper (optional) o 1/3 cup hot pepper paste o 2 tbs hot pepper flakes o 2 tbs natural brown sugar o 1 tbs soy sauce o ½ ts black ground pepper o 2 ts of sesame oil 2. Heat up the pan over high heat. 3. Mix and stir all ingredients with a wooden spoon, until the pork is cooked thoroughly. It'll take about 10 minutes and the onion will look translucent and mushy when it's done 4. Transfer it to a serving plate and serve with a bowl of rice, some lettuce, a few more side dishes (if you want), some soup, and kimchi.
