Making japchae (Korean stir fried noodles and vegetables)
Full recipe: www.maangchi.com This time I make delicious job chae (also spelled japchae, jabchae, chapchae, chopchae or jobchae), Korean-style stir fried noodles and vegetables. Ingredients: • Starch noodles ("dangmyun") • 150 grams of beef • 1 bunch of spinach • 1 medium size carrot • 1 medium size onion • mushrooms (5 dried shiitake and 1 package of white mushrooms) • 3 cloves of garlic • 7-8 green onions • soy sauce, sesame oil, sugar, pepper, and sesame seeds See my website for photos and details of ingredients: www.maangchi.com Makes 4 servings. How to prepare your ingredients before stir frying: 1. Soak 5 dried shitake mushrooms in warm water for a few hours until they become soft. Squeeze the water out of them and slice thinly. 2. Slice a package of white mushrooms (2 cups' worth). 3. Cut a carrot into thin matchstick-shaped pieces 5 cm long. 4. Cut 7 -8 green onions into 7 cm long pieces. 5. Slice one onion thinly. 6. Slice 150 grams of beef into thin strips. Now let's start! 1. Boil 2 bunches of noodles in boiling water in a big pot for about 3 minutes. When the noodles are soft, drain them and put in a large bowl. 2. Cut the noodles several times by using scissors and add 1 tbs of soy sauce and 1 tbs of sesame oil. Mix it up and set aside. *tip: Take one sample and taste it to see whether or not it's cooked properly. If it feels soft, it's finished. 3. Japchae - Korean sweet potato noodles stir-fried with vegetables
This dish dates back to 17th Century, created to please King's palate for one of King's big party. This tradition continues, as a kid growing up in Korea, my mother prepared Japchae on every special occasion and for special guests, as result, Japchae has nothing but happy memories! I love making this dish; it is very festive and delicious. The type of noodle used in this dish is made from sweet potato starch and translucent when cooked, which is how they got the name, "glass noodles." They are also gluten free, as well as fat free. These noodles are wonderfully springy and light, it dances in your mouth. Perfect to serve in the summer time; you can serve these noodles at room temperature or slightly chilled. (For an equally delicious vegetarian Japchae, omit the beef).

Japchae is a delicious Korean stirfried noodle dish made with tender slivers of marinated beef and an assortment of healthy colourful vegetables all mixed together with a signature chewy sweet potato noodle called dangmyun. Julienne the carrot and mushrooms. 2.) Cut the onion into thin slices and the scallion into small strips. 3.) Cut the beef into thin strips. 4.) Boil the daengmyun in a pot of water for 3 min. Drain and keep the boiling water. 5.) Boil the spinach for 1 min. Drain and rinse under cold water 3 times. Set the noodles and spinach aside in a large mixing bowl. 6.) With some olive oil, stir-fry the carrot real quick. Remove from heat and add to bowl with noodles and spinach. 7.) Mix noodles, spinach, and carrot strips with some soy sauce and sesame oil. 8.) Next, stir-fry the onion slices and scallion. Remove from heat and add to mixing bowl and mix. 9.) Mince the garlic cloves and stir-fry with the beef. Add mushrooms in when halfway through cooking the beef. Add some sugar and stir-fry until cooked. 10.) Remove the beef and mushrooms and add to mixing bowl with rest of the ingredients. We choose to make Japchae with the additional ingredients from Indonesia. They were Mango and Kerupuk. We used 'Manalagi Mango' because it is so delicious and not too soft, so it will not change the original taste of Japchae. And also we use Kerupuk, a special chip from Indonesia that made from rice flour, that we made it as a side dish for Japchae. Bokkeum Japchae
Cooking time: 20 minutes Persons: 2 or 3 or as a side dish Ingredients: 1 sheet fish cake (alternative is 5 crab sticks) 1 onion ½ red bell pepper ½ yellow bell pepper ¼ cucumber ¼ cup salted seawead (alternative is Japanese Wakame salad) 4 green beans 2 green onions 1 clove garlic 1 tbs. sesame oil 1 tbs. soy sauce 1 tbs. cooking oil Black pepper Sesame seeds Soak the salted sea weeds for 5 minutes in water and since the salt off. Slice in pieces of 4 cm. Slice the fish cake in match sticks. Slice the onion, bell peppers, cucumber, green beans and green onions in match sticks. Put all ingredients on a plate so they can be sauteed one by one. Chop the garlic finely. Heat 1 tbs. of cooking oil and stir fry the garlic for a minute. Add green beans and stir fry untill they turn bright green. Stirfry one by one for a minute in the following sequence: bell pepper, sea weed, onion, green onion and fish cake each for 1 minute. Turn the heat to low and add 1 tbs. of sesam oil and 1 tbs. soy sauce and stir. Turn the heat off and sprinkle with black pepper and sesame seeds. The last ingredient we add is the cucumber and stir this, the cucumber is now warm but not cooked so it retains the liquid inside. Scoop on a serving plate and serve as a main dish with rice or as a side dish. *Tip: this dish is also delicious when it's cold.
