Betty's Happy Jalapeno Poppers Recipe
In this video, Betty demonstrates how to make a wonderful, appealing appetizer, Jalapeno Poppers. These are hollowed out jalapeno halves, filled with a mixture of cheeses, onion, mushrooms, and bacon, and baked in the oven until delicious! Ingredients (for about 2 dozen poppers): 4 slices bacon, chopped in 1-inch squares 1/2 to 1 tablespoon extra virgin olive oil ½ cup onion, finely chopped ½ cup mushrooms, finely chopped 8-oz. cream cheese, softened to room temperature ½ cup finely shredded Monterey jack cheese ½ cup finely shredded mozzarella cheese jalapeno peppers, washed, and cut into two halves lengthwise, with seeds and fibers removed Fry 4 slices of bacon (chopped) in a skillet over medium heat. Drain on paper toweling, and set aside. Discard bacon grease and add 1/2 to 1 tablespoon olive oil to the skillet where the bacon was fried. Add ½ cup finely chopped onionand ½ cup finely chopped mushrooms to the olive oil in the skillet and saute until softened. In a medium mixing bowl, combine sauteed onion and mushroom, the crisp, fried bacon bits , 8-oz. softened cream cheese, ½ cup shredded Monterey Jack cheese, and ½ cup shredded mozzarella cheese. Mix well. Stuff each jalapeno pepper half with a generous amount of the cheese mixture. Bake at 350 degrees for about 15 minutes. Place on a serving plate, and serve immediately! Jalapeno jelly is a delicious accompaniment to meals with legumes, smoked meats, or poured over a block of cream cheese and eaten with crackers. JALAPENO JELLY Makes 5-6 half pints 3/4 pound jalapeno pepper 1 1/2 cups apple cider vinegar 6 cups sugar 2 pouches liquid pectin 3 drops green food coloring - optional Wash and seed pepper. Place 3/4 pound of peppers in blender with 3/4 cup apple cider vinegar. Blend to a pulp. Pour pepper vinegar mixture into a large pot. Stir in remaining vinegar and sugar. Bring to a continuous boil for 10 minutes. Stir in pectin. Boil hard for 1 minute. Remove from heat. Stir in food coloring if desired. Ladle into sterilized half pint jars. Wipe rim of jar with damp cloth of paper towel. Screw on lids and bands. Boil in boiling water bath for 15 minutes. Remove jars to cloth lined counter. Allow to cool completely. Remove bands and wipe down jars. Label and date. Store in a cool dark place until ready to use. Enjoy *** You may use onion, garlic and/or bell pepper in this jelly. Any or all of these should be considered as part of the 3/4 pound of pepper. Do not exceed 3/4 pound of vegetables total.

In this video, Betty demonstrates her gorgeous and tasty Cheddar-Jalapeno Skillet Cornbread. It is a blend of eggs, cornmeal mix, cream-style corn, milk, vegetable oil, Cheddar cheese, chopped onions, and chopped jalapenos baked in an iron skillet until browned and sizzling. Yummy! Ingredients: 2 eggs, well beaten 1 cup self-rising cornmeal mix 14 ¾-oz. can cream-style corn 1 cup milk ¼ cup vegetable oil 2 cups finely shredded Cheddar cheese ¾ cup onion, finely chopped 2 to 4 jalapeno peppers, washed, seeded, and finely chopped ½ to 1 tablespoon peanut oil for greasing cast iron skillet Cilantro, for garnish (optional) In a large mixing bowl, beat 2 eggs, using an electric mixer. Stir in 1 cup self-rising cornmeal, a 14 ¾-oz. can of cream-style corn, 1 cup milk, ¼ cup vegetable oil, 2 cups shredded Cheddar cheese, ¾ cup chopped onion, and 2 to 4 chopped jalapeno peppers. Place ½ to 1 tablespoon peanut oil in a 10 ½-inch cast iron skillet, and heat until very hot, but not smoking. (If you do not have a cast iron skillet, you may use a 10-inch deep dish pie plate or other ovenproof dish, greased with peanut oil, but do not heat the oil.) Pour the cornbread batter into your heated skillet, leaving at least ½-inch for the cornbread to rise. (You may bake any excess batter in a small Pyrex baking dish to bake alongside the skillet.) Here is the recipe: Ingredients * 15 jalapenos, preferably red, cut in 1/2, seeded and deveined * 1 tablespoon canola oil * 2 pounds mild Italian sausage, casings removed * 1/4 cup minced red onion * 1/4 cup minced red bell pepper * 3 tablespoons minced garlic * 2 table spoons of ricotta cheese * 2 cups mascarpone or cream cheese * 1/4 cup grated Parmesan, plus more for garnish * Salt and pepper * 1/2 cup shredded mozzarella cheese DirectionsPreheat oven to 350 degrees F and set a rack in the middle of the oven. Place jalapenos on a sheet tray and roast for 10 minutes. Remove from the oven and let cool. Turn broiler on medium. Heat the oil in a medium saute pan. Add the sausage and cook for 5 to 7 minutes. Add the onions, peppers, and garlic and cook to soften for about 5 minutes. Remove and place in a large bowl. Cool to room temperature, then add mascarpone, Ricotta and Parmesan. Mix ingredients thoroughly and season with salt and pepper. Place approximately 1 tablespoon of mixture into each jalapeno half, and top with 1/2 teaspoon of mozzarella cheese. Place the sheet tray of stuffed peppers in oven and broil until mozzarella cheese melts.

Slice off pepper tops and de-seed (a hand peeler makes this easy). Mix cream cheese, herbs, cumin, and salt together. Stuff peppers with cream cheese mixture. Dab the ends of the peppers into the bread crumbs to help seal the cream cheese inside. Heat olive oil in skillet to med heat. Add chopped onions (also add chopped red bell peppers if desired). Gently add stuffed jalapenos to the skillet. Stir onions and turn the peppers gently to cook on all sides. Some cream cheese may leak out, but it only makes the dish taste better. Buffalo Chicken Jalapeno Poppers
My video response to copykatrecipes Super Bowl recipe contest. Buffalo Chicken Jalapeno Poppers Ingredients 1 lb ground chicken breast 1 packet of ranch dressing mix 1/2 c hot wing sauce 1 tbsp vegetable oil 1 rib of celery, minced 1 tsp ground black pepper 12 large jalapeno peppers, cored and seeded 6 strips of bacon, each cut in half Special equipment Jalapeno grilling rack coring utensil Directions In a bowl combine the first six ingredients and mix well. Remove the tops of the jalapenos and remove the seeds using a corer. Place jalapenos in the rack. Add half the chicken mixture into a zip top plastic bag and cut a small hole in the corner. Using zip top bag as a pastry bag squeeze chicken mixture into each jalapeno. Wrap each jalapeno with 1/2 strip of bacon and secure with a toothpick. Place the rack of peppers on the grill and cook at 350 degrees for 20 to 25 minutes. Check the internal temperature of the chicken with an instant read thermometer, it should read 165 degrees. Remove from grill and allow to cool. Serve with blue cheese or ranch dressing for dipping.
Jalapeno Popper Dip
If you like Jalapeno Poppers, you might really enjoy this appetizer. It has the same flavor. This is a wonderful spicy, creamy dip that has a crunchy topping. Enjoy it with slices of baguette, butter crackers, or whatever your favorite cracker might be. 2 (8 ounce) packages of cream cheese, softened 1 cup mayonnaise 1 cup shredded Mexican Blend Cheese ½ cup shredded Parmesan cheese 1 (4 ounce) can chopped green chile peppers, undrained 1 (4 ounce) can chopped jalapeno peppers, undrained Topping: 1 cup Panko breadcrumbs ½ cup shredded Parmesan cheese ½ stick butter, melted In a food processor, add the first 6 ingredients and process until smooth. Spread dip into a casserole dish that has been sprayed with cooking spray. In a bowl, mix Panko breadcrumbs, ½ cup Parmesan cheese and melted butter. Mix well and sprinkle evenly over the dip. Bake in a preheated 375° oven for 20 minutes. It should be brown on the top and bubbly around the edges. Serve with sliced baguette or your cracker of choice.
