Quick & Dirty Dip #3 - Greek Basil Yogurt Dip
Jack Scalfani shows you another uniquely simple dip. Strong flavors in just a few minutes. Here is the recipe: Ingredients: 1/4 cup chopped smoked sun-dried tomatoes (may substitute an unsmoked dried tomato) 2 cloves garlic 1/4 cup sliced green onions 1/4 cup lightly packed basil leaves 16 oz. pre-strained plain Greek yogurt Sea salt and freshly ground pepper for taste 1/2 cup chopped walnuts directions Place tomatoes and garlic in a small food processor; process until tomatoes are in tiny pieces. Add onions, basil and 2 tablespoons walnuts; pulse on and off until all ingredients are finely chopped. Transfer to a medium bowl and stir in yogurt. Season to taste with salt and pepper

Lazy Man's Super Bowl Chili
ARE YOU READY FOR SOME CHILI? Jack Scalfani gets his chili on for Super Bowl Sunday. Here is the parody of this show: www.youtube.com Here is the recipe: Ingredients: 1 pound of ground sirloin 1 pound of jimmy dean sausage 1 large onion chopped 1 16 oz bag of mexican cheese 3 cans of black beans 2 cans of pinto beans 1 can of corn 2 jars of salsa (mild) 1/2 tsp of red pepper flakes (optional) 1 can of crushed tomatoes 1 tsp of tomatoe paste 1 tsp of minced garlic pinch of salt to taste pepper to taste Directions: Brown the meat in olive oil in a sauce pot or dutch oven. When meat is about 90% brown, then add in the onions. Finish browning. Add in all the other ingredients. Cook on low flame for about 40-50 minutes. Add cheese at the end and then serve.

Lazy Man's Strawberry Cream Cake
Jack Scalfani shows of his lazy skills again in the easy dessert recipe. Here is the recipe: Ingredients 1 pre-made pound cake (16 oz size) 8 tbsp strawberry jam, divided 1 1/2 cups whipped topping or whipped cream, divided 2 packages fresh raspberries, divided 1 1/3 cups heavy cream 2 cups semi-sweet chocolate chips (or a 16 oz package) Directions 1Slice pound cake horizontally in three thin layers. 2Spread the bottom layer with strawberry jam. 3Take one package of strawberries, and slice the berries in half. Sprinkle half of the berries on top of the jam. 4In a small bowl, mix the whipped topping iwth 4 tbsp of the jam. Dot half of the cream over the jam and berries and gently spread until uniform. 5Place the second layer on top. Spread with the remaining 2 tbsp jam, sprinkle with berries, and dot and spread the remaining whipped topping mixture. Place the last cake layer on top. 6Cover with plastic wrap and refrigerate for an hour or so (overnight is fine as well). 7In the top of a double boiler, heat the heavy cream and chocolate chips, stirring constantly until combined. The mixture will be smooth and shiny when its ready. 8Remove from heat and allow ganache to cool on countertop for 15-20 minutes. Consistency should be pourable, but not runny. 9Pour over chilled cake. Garnish cake with fresh raspberries, if desired. 10To serve, slice and plate (with fresh raspberries and extra ganache) if desired.

Slow Cooked Beef Roast
This is normally for Brisket, but any beef roast on sale will do. This is one of the more flavorful dishes Jack Scalfani has made. Here is the recipe: Slow Cooked Beef Roast Ingredients * 2 tablespoons vegetable oil * 1 (5- to 6-pound) brisket or any beef roast * 2 large onions, peeled and cut into 1/4-inch slices * 6 garlic cloves, peeled and minced * 1 (12-ounce) can beer * 1/2 cup low-sodium beef broth * 4 celery stalks, cut into 1/2-inch slices * 1/2 cup tomato paste * 1 (14 1/2-ounce) can stewed tomatoes * 2 bay leaves * 1/2 cup packed dark brown sugar * 1/3 cup Dijon mustard * 1/2 cup red wine vinegar * 1/4 cup regular molasses * 1/3 cup soy sauce * 1 teaspoon paprika * Salt and freshly ground black pepper to taste Preparation Heat 1 tablespoon of the oil in a large sauté pan over medium-high heat. Brown the brisket well on all sides. Place the browned meat in the slow cooker insert. Add more oil, if needed, and sauté the onions until soft, about 4 minutes. Add the garlic and cook 2 minutes more. Scrape the vegetables into a big bowl. Pour the beer and broth into the sauté pan and bring to a boil, scraping up the meat bits in the pan with a wooden spoon. Pour over the meat. Add the celery, tomato paste, stewed tomatoes, bay leaves, brown sugar, mustard, vinegar, molasses, soy sauce, and paprika to the big bowl with onions and stir thoroughly. Then pour mixture on top of meat. Cover and cook for 8 hours on LOW or 5 to 6 hours on HIGH, or until the meat is fork-tender ...

How to make Rice Pudding
Jack Scalfani shows you his family's secret recipe on how to make Rice Pudding. Rice Pudding Recipe 1 ½ cups long grain rice 4 cups water 6 cups milk 2 cups sugar 2 eggs 1 T vanilla 1/8 tsp salt 1/8 tsp cinnamon Boil rice in water till water is gone. Add milk and cook on low flame till thick. Beat eggs, vanilla, drop of milk and cinnamon. Add mixture to rice and cook till thoroughly blended. Put in bowl and sprinkle with cinnamon. Note: recipe can be cut in half or doubled.

Incredible Mac & Cheese
Jack Scalfani makes incredible mac & cheese with a few special ingredients. Here is the recipe: INCREDIBLE MAC & CHEESE 12 ounces penne pasta 4 cups cheese sauce (recipe follows) 2 ounce cheddar, grated (1/4 cup) 2 ounce Gruyere cheese, grated (1/4 cup) 1/2 to 1 teaspoon chipotle chile powder (depending on how much spice you prefer) Preheat oven to 350 degrees. Oil or butter a 9 x 13-inch baking dish. Cook the penne 2 minutes less than package directions. (It will finish cooking in the oven.) Drain pasta and set aside. Combine cooked pasta and cheese sauce in a large bowl and mix carefully but thoroughly. Scrape the pasta into the prepared baking dish. Sprinkle the top with the cheeses and then the chile powder. Bake, uncovered, for 30 minutes. Let sit for 5 minutes before serving. _________________________ CHEESE SAUCE MAKES ABOUT 4 CUPS 1/4 cup (1/2 stick) unsalted butter 1/3 cup all-purpose flour 3 cups milk 14 ounces aged Cheddar cheese, grated (about 3 1/2 cups) 2 ounces grated Monterey Jack cheese 1/4 to 1/2 teaspoon chipotle chile powder 1/8 teaspoon garlic powder Melt the butter in a heavy-bottom saucepan over medium heat and whisk in the flour. How To Make Beef Jerky At Home
Jack Scalfani shows you how to do homemade beef jerky. PLEASE SUBSCRIBE TO THIS CHANNEL. IT'S FREE. Here is the recipe for the marinade that Jack used. Ingredients: 1 1/2 to 2 pounds flank steak 2/3 cup Worcestershire sauce 2/3 cup soy sauce 1 tablespoon honey 2 teaspoons freshly ground black pepper 2 teaspoons onion powder 1 teaspoon liquid smoke 1 teaspoon red pepper flakes (add more to make hotter) Special Equipment: 1 box fan, 2 paper air-conditioning filters, and 2 bungee cords or shipping tape Basically what you want to do is trim the meat of any fat. Then stick it in the freezer for about an hour or two until it's firm. You don't want it completely frozen, but this helps with the slicing. Cut long, thin strips WITH the grain. I know this is counterintuitive, but this is what you want to do for good jerky; we're not making steaks here. ;-) Mix all of the marinade ingredients together in a large zip-lock baggy, and drop in your meat. Ensure all the pieces are coated, and throw it in the refrigerator for about 6 hours. When 6 hours is up, remove the meat, pat the pieces dry and grab your filters. Lay the strips out in the grooves of the filter. Cover with the other filter, and bungee or tape the stack to your (preferable square) box fan. Turn the fan on high, and let it blow over the meat for 12 hours. After 12 hours is up, it's time to enjoy some delicious, delicious home made jerky.

Jack Scalfani collaborates with DIVAS CAN COOK channel. watch the rest of this video at www.youtube.com Here is the recipe: CUPCAKES INGREDIENTS 1½ cups graham cracker crumbs ¼ cup sugar 6 tbsp. unsalted butter, melted 8 oz. chocolate bar, finely chopped Marshmallows 2 cups granulated sugar 1¾ cups all-purpose flour ¾ cup cocoa powder 1½ tsp. baking powder 1½ tsp. baking soda 1 tsp. salt 2 large eggs, lightly beaten 1 cup whole milk ½ cup vegetable oil 2 tsp. vanilla extract 1 cup hot water MARSHMALLOW FROSTING INGREDIENTS 1 1/2 cups powdered sugar 1/4 cup water 2 egg whites, room temperature 2 tablespoons light corn syrup 1/4 teaspoon salt 1 teaspoon vanilla extract (optional) Preheat oven to 350. In a large bowl, stir crushed graham crackers, 1/4 cup sugar and melted butter until crumbly. Place cupcake liners in pan. Add 1 tablespoon of graham cracker mixture per cupcake liner. Use the bottom of a shot glass or spice bottle to flatten the crumbs. Bake for 5 minutes. Add about 4 marshmallows and a few pieces of chopped chocolate to each cupcake. Set aside. In large bowl sift together 2 cups sugar, flour, cocoa powder, baking powder, baking soda and salt. Add in eggs, milk, vegetable oil, vanilla extract and water. Mix on medium speed until well incorporated. Batter will be runny. Spoon batter evenly into cupcake liners, about 3/4 full. Bake for about 18-20 minutes. The marshmallows may float to the top. FRENCH ONION SOUP

Be sure to subscribe. check out his new channel "Jack on the Go" youtube.com French Onion Soup 1/4 cup (1/2 stick) butter 6 onions (about 3 pounds), sliced 6 garlic cloves, sliced 1/2 cup dry white wine 3 cups canned low-salt chicken broth 3 cups canned beef broth 1 teaspoon Dijon mustard 4 sourdough bread slices, toasted 1 cup grated Swiss cheese 1/2 cup grated Parmesan Melt butter in heavy large saucepan over medium heat. Add onions and garlic and saut? until very tender and brown, about 45 minutes. Add wine and simmer until reduced to glaze, about 3 minutes. Stir in chicken broth, beef broth and mustard. Simmer 20 minutes. Season to taste with salt and pepper. (Can be prepared 1 day ahead. Refrigerate. Return soup to simmer before continuing.) Preheat broiler. Ladle soup into broilerproof bowls. Top each with slice of toast and grated cheeses. Broil until cheeses melt and bubble.
