Indian Cuisine: How to Make Aloo Gobhi - as part of the food and kitchen series by GeoBeats. Aloo Gobhi is Indian for Cauliflower which is the Gobhi, and Aloo is the potatoes. The first thing we do with this dish is add the oil and let the oil heat. Add about a teaspoon of Cumin. So I wait, once the seeds start sizzling, I add in chopped potatoes, shake in Turmeric, ground Cumin and Coriander. It is important to use the spices as freshly ground as possible. That is what gives the food the flavor. Add in cauliflower. You toss to coat. This is some ginger garlic paste, dried red chilies. Shake in some red chili powder. This is usually to taste, as is the salt. Lastly I add in some chopped tomatoes and green peas. You basically keep stirring the dish until the vegetables are evenly coated with the spices that you have added, and once it reaches that point, you cover and let the dish cook on low heat. About halfway through, I check my Aloo Gobhi to see how we are doing. As you can see, it is getting there. The cauliflower is cooked. It is important that the vegetables are very soft in this dish. So about 20 minutes later, you are done with the Aloo Gobhi. The potatoes are soft as are the cauliflower. You turn off the heat and your Aloo Gobhi is done.

Utensils for Steaming Idlis Idli stand - this has 3 to 4 plates stacked over each other. For this recipe I am using the rack that makes 16 Idlis. I think the number one myth associated with Indian cuisine is that it is hot and spicy. People confuse hot with spicy. Spicy does not necessarily mean hot. A combination of different spices go into the making of a good curry, but they are not necessarily hot. The heat comes from red chili peppers or cayenne pepper and ground black pepper. So if you love a curry, but you do not want too much heat to it -- hold on to all the other spices that go into the making of a curry. Just cut back on the cayenne pepper or the black pepper. The second myth that I think a lot of people think about when they think about Indian food is that all Indian food is curry. Now, all Indian food is not necessarily curry. A curry to an Indian refers to any meat or vegetable that is cooked in a spicy sauce. We have a whole range of dishes that do not have a sauce; that are not curried. There is a whole new world out there to Indian cuisine that is not just curry. The third myth that I think a lot of people have about Indian food is that it is greasy and hard to digest. Ingredients- 400gm paneer 1 cup yoghurt, beaten well ½ cup coriander leaves finely chopped 2 tbsp mint leaves finely chopped 1 inch cinnamon stick 2-3 bay leaves 2-3 green cardamoms& cloves each 1 tsp cumin powder ½ tsp garam masala 2 tbsp coriander powder 2-3 tbsp ghee / butter Salt to taste 2 cups water 1 tbsp black peppercorns powdered coarsely 2 tbsp fresh cream To make paste: 3 onions sliced 3 garlic pods 1 inch ginger chopped 2 green chillies Preparation- Firstly to make a paste cut the onions and fry them till golden brown,3 garlic pods,ginger and 2-3 green chillies and blend them in a mixer. A smooth paste is made. Now add the butter and heat it up, add cinnamon,cloves, cardamom,bay leaves and fry them, now add the paste which we made earlier and mix it well. Add the yoghurt,coriander powder,cumin powder,salt and mix it well Now add water, paneer,mint,coriander leaves, black pepper,fresh cream and garam masala.
