Kimchi Chronicles - Episode 10 Intro - "The Noodle and Dumpling Chronicles"

Like an Italian with a bowl of spaghetti or tortellini, a Korean eating a heap of noodles or dumplings is a satisfied customer. In Korea, slurping is not only permitted, it's considered a compliment to the cook. This episode features a restaurant in Seoul known for its nenngymyun, an unusual dish of elastic buckwheat noodles served with ice-cold beef broth. She also visits a spot known for the best kalgooksu, or hand-cut noodles, and another beloved restaurant famous for its hefty portions of mandoo (dumplings). At home in New York, Marja prepares jajangmyeon her favorite comfort food of chewy noodles with savory black bean sauce. Both Marja and Jean-Georges interpret refreshingly cold noodle soups and Jean-Georges puts his spin on chapchae, the popular Korean noodle and vegetable stir-fry. Let the slurping begin.

Full recipe, photos, and ingredients are on my website: www.maangchi.com Sujebi (mild version): 2 servings Ingredients: Flour, salt, vegetable oil, water, dried anchovies, dried kelp, green onion, potatoes, onion, fish sauce, sesame oil. Directions: 1.Combine 2 cups of all purpose flour with ¾ cup water, ½ ts salt, and 1 TBS of vegetable oil in a large bowl. Knead by hand for 10-15 minutes until the dough gets softer and sticks together firmly. 2.Put the dough into a plastic bag and keep it in the refrigerator. *tip: Using a food processor is very convenient and saves time. If you use a food processor, use the dough blade and knead all the above ingredients for 1 minute until the dough sticks together and gets lumpy. Let's make stock: 1.Place 10 cups of water in a large pot. Add about 4×6 inch square of dried kelp, and 10 dried anchovies (with the heads and guts removed). 2. Bring it to a boil for 15-20 minutes over medium high heat, then lower the heat to simmer for another 20 minutes. 3. Turn the heat off and take the anchovies and kelp out. 4. Peel 2 medium sized potatoes and cut them into 6-7 chunks each. Add them to the pot. 5. Add a half cup of sliced onion and 3 cloves of minced garlic to the pot. 6. Boil for 10 minutes over medium high heat. 7. Cut the kelp into bite sized pieces. Chop 1 stalk of green onion. Set them aside. 8. Open the pot and add 1 TBS fish sauce and the kelp strips. 파김치와 홍합칼국수 효능: Ingredients (4 serving) A. 2lb(6단) 파 양념간장  1cup 멸치 액 젓  1cup 고춧가루  1cup 찹쌀 풀  1cup 사과 즙  1cup 양파 즙  1/2 cup 맥아 물엿  2T 통깨 대접에 재료를 합하여 고루 잘 섞어 양념장을 만든다. 절임 소금물  1/2 cup 소금  1 cup 액젓  1 cup 물 재료 밑 준비하기  파는 다듬어 흐르는 물에 씻어 준비한다.  준비한 파는 절임 소금물에 8시간 절여 다가 씻지 말 그대로 파김치를 담는다. 만드는 법 1) 절인 파에 김치양념장을 넣어 고루 버무려서 타래를 만들어 보관 용기에 차곡차곡 담아 3주정도 푹 익혀서 먹으면 맛있다. 홍합칼국수 Ingredients (4 serving) A. 4단 우동 B. 3 QT물 C. 1 마리 오징어 D. 1cup 홍합 E. 3개 풋고추 F. 1단 깨잎 G. 1/2 단 미나리 H. 1T 미네랄 소금 I. 1T 향신간장 전골용 J. 2T 국시장국 멸치 재료 밑 준비하기  오징어와 홍합은 밑 손질하여, 오징어는 한 크기로 썰어 놓는다.  야채는 흐르는 물에 씻어 같은 크기로 썰어 준비한다. 만드는 법 1) 먼저 냄비에 물을 부어 펄펄 끓여 우동을 넣어 우동이 다 익으면 오징어, 홍합, 향신간장, 국시장국 멸치, 미네랄소금 넣어 간이 배 이도록 끓인다. 2) 간이 배인 우동국수에 깻잎, 미나리, 풋고추를 넣어 그릇에 담아 상에 낸다.

For this recipe visit: www.legourmet.tv Fresh egg pasta noodles... I was always scared to make these, I though that they would be hard or you needed a pasta machine to get it right. I was wrong. After watching chef Gianni from Sola in Hong Kong make these while I was interviewing him, I decided that it really wasn't so hard and all I needed was a rolling pin -of which I have several. This recipe makes about 1-1/4lbs of pasta and you can easily double it for a larger crowd. Remember to have an extra egg handy, just in case that the dough doesn't come together; add the yolk first, if that isn't enough then add the white. I would highly recommend that you try this with our Braised Beef Pasta Sauce recipe. Ingredients: 3 large eggs (+ another on hand if needed) 2 cups all purpose flour 2 tblsp olive oil Method: Place the flour on your countertop, and make a well in the centre. Add the three eggs and olive oil to the well. Break up eggs with your fingers and slowly mix flour into centre of well. Bring ingredients together into a ball - if too dry add extra egg. Once you have a ball that isn't too sticky or too dry... (I know kind of vague, but it'll make sense) Knead ball until dough is smooth. If using a pasta machine - roll as per directions with machine. Oh LUCKY ME ! updated instructions, please read; Hi Teri, The flour is all purpose regular flour, you need add some salt warm water to make the dough, not too much salt, i think it is about one teaspoon. My mom doesn't have a mixer, so it is lots of hand working in it. About the meat pie, it has pork in it, some green onion, soy sauce, cooking wine and some vegetable ( cabbage, chinese napa, green bean....), really depends how you like it. Chinese people like ginger root and garlic in the pie, most of them like hot pepper too. We don't have oven in China, so again we use pan fry, some vegetable oil, medium heat, each side about five minutes. I am not good at this kind of stuff, tried few times here but not came out tasty. Few restaurants take the modern way of soba to a greater level of refinement than Honmura-an, a family-owned restaurant in one of Tokyo's wealthiest neighborhoods, Ogikubo. The Japanese specialize in raising the ordinary to art, whether in making tea, Kanji / caligraphics, Origami or, in recent years, making soba. In the hands of Tokyo's few soba-masters, this common dish has been elevated into an engaging play of low and high culture, the old Japan and new. In a glass-fronted room near the restaurant's entryway, open to the view of customers, the real magic takes place. The flour is mixed in large lacquered bowls with water drawn from a deep well. Once it is kneaded to the right consistency, the dough is rolled into a large ball and then slapped down on the flour-dusted wooden rolling table. The noodle makers must roll the dough out to just a few millimeters in thickness with long, thin rolling pins, while fighting to keep it from tearing. When the rolling is completed, the dough is in a sheet several yards long. It is folded over on itself several times and then sliced quickly with a heavy, sharkskin-handled cleaver into grayish noodles about 12 to 14 inches long. Rice cannot be grown in mountainous area of Japan and buckwheat is the main crop.
