Making japchae (Korean stir fried noodles and vegetables)

Full recipe: www.maangchi.com This time I make delicious job chae (also spelled japchae, jabchae, chapchae, chopchae or jobchae), Korean-style stir fried noodles and vegetables. Ingredients: • Starch noodles ("dangmyun") • 150 grams of beef • 1 bunch of spinach • 1 medium size carrot • 1 medium size onion • mushrooms (5 dried shiitake and 1 package of white mushrooms) • 3 cloves of garlic • 7-8 green onions • soy sauce, sesame oil, sugar, pepper, and sesame seeds See my website for photos and details of ingredients: www.maangchi.com Makes 4 servings. How to prepare your ingredients before stir frying: 1. Soak 5 dried shitake mushrooms in warm water for a few hours until they become soft. Squeeze the water out of them and slice thinly. 2. Slice a package of white mushrooms (2 cups' worth). 3. Cut a carrot into thin matchstick-shaped pieces 5 cm long. 4. Cut 7 -8 green onions into 7 cm long pieces. 5. Slice one onion thinly. 6. Slice 150 grams of beef into thin strips. Now let's start! 1. Boil 2 bunches of noodles in boiling water in a big pot for about 3 minutes. When the noodles are soft, drain them and put in a large bowl. 2. Cut the noodles several times by using scissors and add 1 tbs of soy sauce and 1 tbs of sesame oil. Mix it up and set aside. *tip: Take one sample and taste it to see whether or not it's cooked properly. If it feels soft, it's finished. 3. Ten Veggies Dish (Chap Chae)

So I have some veggies in the fridge that have been there for some time. I don't want them to go bad. So I decided to cook this dish. It is literally called the ten veggies dish in chinese. It doesn't have to be 10, it could be 9,8,7,6,5,4.. any less than 4, its time to go to groceries. This is a very popular dish in south east asia. Its got this incredible sauce that is a mixture of soy sauce and natural juices from many veggies. Eat with steam rice, not so good with french baguette, probably go very well with angel hair pasta or spaghetti to make a vegetarian lo-mein. Don't cook the veggies too long (total cooking time 5-6 minutes max) or they become mushy and vitamins get destroyed. I learned this from just watching my mom cooked this dish few times a month. I almost never cooked while staying at home cause there was mom, but later in life after I left home and kinda missed some home cooking, I would remember how she would do a particular dish. And to my surprise, my recreations are pretty close if not right on.

Start with oxtails sections and a few soup bones. In this batch I had three pounds of soup bones and eight pounds of ox tail sections. Soak the bones for two hours changing the water when it gets bloody. Boil the bones for twenty or thirty minutes, drain and wash the bones. Put bones back in pot with a one inch price of ginger and six cloves of garlic boil again for two hours. Skim any scum and keep adding water. Remove ox tail sections and let cool. Remove meat from most ox tail sections put bones back in pot. Save a few with meat for serving. Cook another one to three hours. Season the meat with soy sauce, sesame oil, red pepper powder, green onion, garlic and sesame seeds. On saved section trim excess fat and make cuts so that it easier to remove meat. Put saved sections in small pot with some of the broth from the main pot. (add more water to the main pot and keep cooking). Cook save sections for about one hour then add a few noodles ( I like the same ones used for Chap Chae). Put oxtail sections in bowl with a few noodles then add broth. Add green onions and salt to taste. Or put some of the spiced meat with a few noodles then add broth. Salt to taste. This is a very nice Korean soup

Ddukbokki (hot and spicy rice cake)

"Dukbokki" (or dduk bok ki, tteokbokki, dduk bok kie, tteokbokki, dduk bok kie, dduk bok kee, dduk bok ki, tuck bok key, ddukbokki) is a popular snack in Korea. See the full recipe on my site: www.maangchi.com Ingredients for hot spicy ddukbokkie: Tube shaped rice cake for ddukbokkie (about 300 grams), hot pepper paste, sugar, water, dried anchovies, and green onions. In a pan, pour 4 cups of water and add 7 large dried anchovies after removing their heads and intestines. Boil the water for 10 minutes over medium heat. 3. Remove the anchovies and add the rice cakes, 4-6 tbs of hotpepper paste, 1 tbs of sugar, and 1 tbs of hotpepper flakes (optional). Stir it constantly. 4. Cut 7 green onions into 5 cm long pieces, and add them to the pot. 5. Keep stirring until the sauce is thick and the rice cake is shiny. 6. Transfer it to a plate and serve! Ingredients for mild ddukbokkie: 1 package of rice cake, beef strips, soy sauce, sugar, garlic, onion, king oyster mushrooms, water Directions: 1. Saute 200 grams of beef strips with 2 tbs soy sauce, 1 tbs sugar, 2 cloves minced garlic, and 3 tbs of sliced onion. 2. Add 3-4 sliced king oyster mushrooms and 2 chopped green onions to "1″ and stir it. 3. Add 1 cup of water and put rice cake in it and keep folding until rice cake is soft. 4. Serve it on a plate and eat it when it is warm.
