Beef Broth
www.traditional-foods.com Beef broth is a nourishing and economical item to keep in your kitchen. We outline our process in great detail in the link above, but this is our basic process. Beef Broth Ingredients *2 pounds of beef bones *2 tablespoons of vinegar *3 quarts of water *Optional: one peeled onion, one carrot, two celery stalks, one garlic clove. Beef Broth Steps 1. Roast your raw beef bones for the best flavor. (30-45 minutes at 350 degrees.) 2. Add bones to crock pot or stove-top pot. 3. Add vegetables if you are using them. 4. Cover the bones and vegetables with water until the beef bones are completely covered and the water level is about one inch above the bones. 5. Add vinegar. 6. Turn crock pot on low. 7. Watch the broth in the first few hours and skim off any "scum" that may rise to the top. 8. Stew your bones for about 24 hours. 9. Pour off the beef broth and use it in your soup recipe. (Skim the fat first if desired.)

This is a rich gravy that you can make without cooking meat for stock. Ingredients: 1 medium onion, chopped 2 stalks celery, chopped 1 tablespoon butter 1 tablespoon extra virgin olive oil 10.5-ounce can beef broth (You may substitute a can of beef consommé or beef bouillon.) 1 cup water 1 beef bouillon cube ¼ cup additional water 2 tablespoons cornstarch ¼ teaspoon Kitchen Bouquet (You may use Gravy Master or a generic brand.) CHICKEN NOODLE SOUP
Jack Scalfani makes classic chicken noodle soup. Be sure to subscribe. it's free. Here is the recipe that Jack did: * 16 cups canned low-salt chicken broth * 1 3 1/2-pound chicken, cut into 8 pieces * 1/2 cup chopped onion * 2 carrots, peeled, thinly sliced * 2 celery stalks, sliced * 16 ounces dried wide egg noodles * 1/2 cup finely chopped fresh parsley Combine chicken broth and chicken in heavy large pot. Bring to boil. Reduce heat; cover partially and simmer until chicken is cooked through, about 20 minutes. Using tongs, transfer chicken to large bowl. Cool chicken and broth slightly. Discard skin and bones from chicken. Cut chicken meat into bite-size pieces and reserve. Spoon fat off top of chicken broth. Return broth to simmer. Add onion, carrots and celery. Simmer until vegetables soften, about 8 minutes. (Can be prepared 1 day ahead. Cover chicken meat and broth separately and refrigerate. Bring broth to boil before continuing.) Cook your noodles separately (very important), about 5 minutes. Season soup to taste with salt and pepper.

FRENCH ONION SOUP

Be sure to subscribe. check out his new channel "Jack on the Go" youtube.com French Onion Soup 1/4 cup (1/2 stick) butter 6 onions (about 3 pounds), sliced 6 garlic cloves, sliced 1/2 cup dry white wine 3 cups canned low-salt chicken broth 3 cups canned beef broth 1 teaspoon Dijon mustard 4 sourdough bread slices, toasted 1 cup grated Swiss cheese 1/2 cup grated Parmesan Melt butter in heavy large saucepan over medium heat. Add onions and garlic and saut? until very tender and brown, about 45 minutes. Add wine and simmer until reduced to glaze, about 3 minutes. Stir in chicken broth, beef broth and mustard. Simmer 20 minutes. Season to taste with salt and pepper. (Can be prepared 1 day ahead. Refrigerate. Return soup to simmer before continuing.) Preheat broiler. Ladle soup into broilerproof bowls. Top each with slice of toast and grated cheeses. Broil until cheeses melt and bubble.
Spanish Rice
Spanish Rice 4 cups Chicken Broth (or 1&1/2 cubes of chicken bouillon put into 4 cups of water) 2 cups Dry Long Grain Rice 4 Tablespoons oil (olive oil, vegetable oil, cooking oil, etc., whatever you have on hand) 1 8oz can of Tomato Sauce Garlic Powder Onion Powder Regular Salt Start by boiling the chicken broth (or the water and chicken cubes). A few minutes after turning the heat on to boil the broth, simultaneously grab another pan and put it on medium heat. Pour the oil into the pan, and add in the uncooked rice as well. The goal here is to saute or brown the rice. Keep stirring the uncooked rice as it gets browned in the oil. Once the uncooked rice is mostly browned (but not burned!), add in the small can of tomato sauce to the rice. Stir it a few times, then turn the heat LOW. By this time, the chicken broth should be boiling in the other pot, so pick it up and CAREFULLY pour it into the pan with the rice and the tomato sauce. The reason why we turned the heat low earlier was so the broth wouldn't splash all over the place when pouring it into the pan. Stir the liquid and rice a few times, then turn the heat back on to high so the liquid can start to boil again. HOWEVER, before the liquid can come back to a boil, grab a spoon and taste the liquid. Now comes the tricky part. There's no real science or measurements for this next part. It's basically a matter of taste. After tasting the liquid, add in some garlic powder and onion powder (a little at a time of course ...
Betty's Curried Rice Recipe
In this video, Betty demonstrates how to make Curried Rice to accompany Baked Coconut Shrimp with Jamaican Jerk Seasoning. This rice is made by cooking rice in butter until it is golden, and then adding curry powder, chicken broth, and salt, and cooking on the stove top until done. Ingredients: 1 ¼ cups rice (I used long grain white rice, but you may use any type of rice.) 4 ½ tablespoons butter, melted 1 teaspoon curry powder 1 ½ teaspoons (1/2 tablespoon) salt 2 ¼ cups chicken broth In a medium-sized pot, stir together 1 ¼ cups rice and 4 ½ tablespoons melted butter. Place over medium heat and cook while stirring, until the rice is a golden color. Add 1 teaspoon curry powder, 1 ½ teaspoons salt, and 2 ¼ cups chicken broth. Bring to a boil over medium heat. Cover, reduce heat to low, and cook until rice is tender, and chicken broth is absorbed. This rice has a delicate curry flavor, and is a great accompaniment to many meals! I hope you like it! Betty
