Betty's Crisp Cheese Shorties
In this video, Betty demonstrates how to make Cheese Shorties. These are savory cheese crackers that may be used as a snack or as an accompaniment to a dip or salad. Ingredients: ½ cup butter, softened 8 ounces finely shredded Cheddar cheese 1 cup self-rising flour (You may use all-purpose flour.) ¼ teaspoon garlic powder cooking oil spray Use an electric mixer to beat together ½ cup softened butter and 8 ounces shredded Cheddar cheese. Add 1 cup self-rising flour and ¼ teaspoon garlic powder and mix thoroughly. I used my electric mixer for all of the mixing. Form dough into a ball and place in on a clean, smooth surface. Roll the dough into a log that is about 1inch in diameter. Chill or freeze. To prepare for baking, cut log into 1/3-inch slices. Place on a shallow baking pan that is lined with parchment paper and sprayed with cooking oil spray. Place slices about 1 inch apart. Bake at 400 degrees (F) for 8 to 10 minutes. Remove from baking pan and place on cooling rack to cool. When cool, transfer crackers to a nice serving plate. This recipe will make approximately 2 dozen cookies. These taste wonderful alone, but also pair with dishes like soups and salads. Enjoy!!! --Betty :)

Betty's Tortilla Soup--Recipe by Blendtec
A great soup for a quick supper. Pulse in corn kernels, black beans, tortilla chips or your favorite add-in for a chunky soup. This recipe is from Blendtec. You can see their blenders and more recipes at www.blendtec.com. Note: This recipe works in a less powerful blender, too; however, you may want to coarsely chop vegetables like carrots before adding them. Ingredients: 2 Roma tomatoes, quartered ½ large carrot 1" slice red pepper, approximately 1/3 C ¼ avocado, approximately ¼ C avocado flesh 1 chunk onion, approximately 2 Tbsp 1"x1" chunk pepper jack cheese, approximately 1 oz 2 sprigs fresh cilantro 1 tsp no-salt herb seasoning ¾ tsp kosher salt ¾ tsp garlic powder 2 C warm water INSTRUCTIONS Add ingredients to jar in order listed and secure lid. Select "Soups" and serve. For more texture, pulse in additional ingredients such as 1/2 cup tortilla chips, black beans, corn kernels, cheese, chicken or fresh tomato. VARIATIONS: For Tomato Basil Soup, follow instructions as above but substitute 6 medium basil leaves for cilantro and add 1/2 tablespoon agave nectar. Betty Boop 1933 Cab Calloway "Snow-White"
This 1933 cartoon featuring Cab Calloway is remarkable for having been animated by a single individual, Roland C. Crandall, and is considered one of the best cartoons ever made. Crandall received the opportunity to make Snow White on his own as a reward for his several years of devotion to the Fleischer studio, and the resulting film is considered both his masterwork and an important milestone of The Golden Age of American animation. (See The 50 Greatest Cartoons, as Selected by 1000 Animation Professionals, edited by Jerry Beck, Turner Publishing, Inc., 1994.) You don't get to see any live action of Cab in "Snow White," which is too bad, but the animation is incredible and, of course, the music is Cab and his Orchestra at their best. First Cab sings "St. James Infirmary" in the rotoscoped guise of Koko the Clown. "St. James Infirmary" was Cab's original signature tune, but he wanted something written specifically for himself, so he and Irving Mills wrote "Minnie the Moocher" to supplant "St. James Infirmary." The two melodies are extremely similar, and also bear a close resemblance to "Prohibition Blues." "Snow White" ends with the old Missourians instrumental, "Stopping the Traffic." This plot, such as it is, is really more a framework to display a series of gags, musical selections, and clever animation. Critics have cited the film as having some of the most imaginative animation and background drawings from the Fleischer Studios artists ...

Monica also sent some lovely gifts, which are displayed in the video. Directions for Sopapilla Cake: Preheat oven to 350 degrees (F). Cheesecake filling: 16 oz. cream cheese, softened to room temperature 1 cup sugar 1 tsp. vanilla extract Crusts: Two 8 oz. cans of refrigerated crescent roll dough Topping: ¾ cup sugar 1 tsp. cinnamon ½ cup butter, softened to room temperature ¼ cup honey Spray a 13 x 9 x 2 baking dish with vegetable cooking spray and set aside. In a medium sized bowl, beat together the cream cheese, the 1 cup of sugar and vanilla extract until smooth. Set aside. Unroll one can of the crescent roll dough and lay the dough into the bottom of the prepared baking dish. Using your fingers, press the dough evenly into the bottom of the dish, being sure to join any of the perforated sections. You want the result to be one completely joined sheet of crescent roll dough evenly covering the bottom of the dish. Next, top the dough with the cheese mixture, spreading evenly. Then, unroll the second package of crescent roll dough onto the (clean) countertop. Just like with the first roll of dough, using your fingers, press the dough, being sure to join any perforated sections. Betty's Bacon and Cheddar Stuffed Eggs ☼
In this video, Betty demonstrates how to make After-Easter Bacon Cheddar Stuffed Eggs. This is a great way to use up any undamaged hard-boiled Easter eggs! Ingredients (for 8 portions): 4 eggs, hard-boiled and shelled ¼ cup mayonnaise 1 tablespoon sweet pickle juice ¼ cup finely shredded sharp Cheddar cheese 2 strips crisp, finely crumbled bacon dash of salt dash of ground black pepper parsley for garnish Slice each of the 4 hard-boiled eggs horizontally and place the 4 cooked yolks in a small bowl. Place the boiled egg whites on an appropriate serving dish. Mash the egg yolks with a fork, until fairly smooth. Add ¼ cup mayonnaise, 1 tablespoon sweet pickle juice, ¼ cup shredded Cheddar cheese, 2 strips crisp, crumbled bacon, and a tiny dash of salt. Mix until well combined. Place 1/8 of the egg yolk mixture into each of the egg whites. Sprinkle each with a small dash of ground black pepper, and place a tiny sprig of parsley at the center of each stuffed egg. Cover with plastic wrap and refrigerate until ready to serve. This is an alternative to the typical egg salad that a lot of us make from our leftover Easter eggs.
