CHICKEN NOODLE SOUP
Jack Scalfani makes classic chicken noodle soup. Be sure to subscribe. it's free. Here is the recipe that Jack did: * 16 cups canned low-salt chicken broth * 1 3 1/2-pound chicken, cut into 8 pieces * 1/2 cup chopped onion * 2 carrots, peeled, thinly sliced * 2 celery stalks, sliced * 8 ounces dried wide egg noodles * 1/2 cup finely chopped fresh parsley Combine chicken broth and chicken in heavy large pot. Bring to boil. Reduce heat; cover partially and simmer until chicken is cooked through, about 20 minutes. Using tongs, transfer chicken to large bowl. Cool chicken and broth slightly. Discard skin and bones from chicken. Cut chicken meat into bite-size pieces and reserve. Spoon fat off top of chicken broth. Return broth to simmer. Add onion, carrots and celery. Simmer until vegetables soften, about 8 minutes. (Can be prepared 1 day ahead. Cover chicken meat and broth separately and refrigerate. Bring broth to boil before continuing.) Cook your noodles separately (very important), about 5 minutes. Season soup to taste with salt and pepper.

Old Japanese Soba Noodle Restaurant
This wonderful soba noodle restaurant is located in a very old farmhouse high in the mountains surrounding the Japan Southern Alps. Our family fled to the mountains on a hot and humid day in summer and enjoyed several hours dining and relaxing in this lovely old building. The family who own the restaurant make their own noodles fresh daily and grow their own wasabi root which customers prepare at the table (so good!). One of the things I love about old Japanese homes is the way that they can be opened in the warm months to allow fresh air to flow through the house. The wide roof eaves protect the inside from getting wet during heavy summer showers allowing occupants to rest (or even nap as in the case of one couple) while listening to the sound of the rain close at hand. The house was filled with charming artifacts from its previous life as a family home, including a splendid built-in butsudan Buddhist altar and large and well cared-for kamidana god shelf. The excitement near the end of the video is due to the rare sight (difficult to see through the rain and clouds) of a mountain waterfall which only appears during heavy rain.
